Any Stuller experts here?

I went with the standard size 11 on the webpage and it states that the height is 5.92 mm
Based on that, you'd want something no deeper than 5 mm total depth. 5.5 mm is most likely pushing it.
 
So it's the "top height" I need to be looking at?
 
Top height is the full height of the setting, so you want to be less than that since you don't want the culet to be digging into your finger. I did some quick calculations and it's a really tight fit. It is pretty much asking for a 60% to 65% depth gemstone, which is a tall order for most CS.

That’s where you talk to your local jeweler because they may be able to adjust the fit. They can build up prongs, build an extra 0.5 mm around the opening, or something like that. Colored stones do tend to be deeper than diamonds so they fit differently. I’d ask before you give up on the setting. They also might be able to suggest a similar alternative stock setting. I don’t know a lot about this, but I heard they can often work with a mm or 2.

Yeah, I'm beginning to realize that. I may just resort to having a "boring" ol' round radiant stone cut and be done with it.
 
@SouthernGent I think I may have suggested this stone to you before :)), but I think the color is close to what you are looking for and it’s a natural sapphire at a great price. I’m not sure if you have considered an oval though...

Thanks for those suggestions, but I'm having a Paraiba colored YAG cut that I'm planning to have set. Even if it won't fit a stock setting, I'm willing to pay to have one made.

Can a jeweler put an extra bezel ring on top of the open setting? Kind of like a ring within a ring to raise up the stone? Would that affect the light too much?:read:

That setting is really pretty! I guess this is why buyers gravitate toward stock sizes.

I don't know. I stopped by a local shop that's listed as a Stuller dealer today on my walk at lunch. They said to bring the stone in once I have it in hand and they could better advise.
