Fall is here...It''s apple crisp time!!! I prefer that to pie, actually. I''ve looked at a few places online but I thought I''d try here too. There are so many yummy recipes and I thought I''d see if anyone has a good one for apple crisp. I''d love to make a healthier version too, where not as much sugar is needed, but I''d take any recipe you care to post.
 
This is my fave apple crisp recipe. I''ve been making this particular one since I was in the 3rd grade. We canned bushels and bushels of apples. So, I made apple crisp, apple cake, apple salsa, and any other thing you could think of.

4-5 apples pared and sliced
3/4 C flour
3/4 C brown sugar
1/2 t cinnamon
1/2 t nutmeg
1/4 t salt
1/3 C melted butter

Put apples in a 9" pie pan
Mix all remaining ingredients
Spoon mixture over apples
Bake at 375 until apples are tender

My sister says this recipe is good made with Splenda (for her diabetic in-laws)

Recipe Summary

For the pastry:
1 cup all-purpose flour
2 tablespoons granulated or superfine sugar
1/4 teaspoon kosher salt
1/4 pound (1 stick) very cold unsalted butter, diced
2 tablespoons ice water

For the filling:
1 1/2 pounds McIntosh, Macoun, or Empire apples (3 large)
1/4 teaspoon grated orange zest
1/4 cup flour
1/4 cup granulated or superfine sugar
1/4 teaspoon kosher salt
1/4 teaspoon ground cinnamon
1/8 teaspoon ground allspice
4 tablespoons (1/2 stick) cold unsalted butter, diced

For the pastry, place the flour, sugar, and salt in the bowl of a food processor fitted with a steel blade. Pulse a few times to combine. Add the butter and pulse 12 to 15 times, or until the butter is the size of peas. With the motor running, add the ice water all at once through the feed tube. Keep hitting the pulse button to combine, but stop the machine just before the dough becomes a solid mass. Turn the dough onto a well-floured board and form into a disk. Wrap with plastic and refrigerate for at least 1 hour.

Preheat the oven to 450 degrees F.

Flour a rolling pin and roll the pastry into an 11-inch circle on a lightly floured surface. Transfer it to a baking sheet.
For the filling, peel, core, and cut the apples into 8ths. Cut each wedge into 3 chunks. Toss the chunks with the orange zest. Cover the tart dough with the apple chunks leaving a 1 1/2-inch border.

Combine the flour, sugar, salt, cinnamon, and allspice in the bowl of a food processor fitted with a steel blade. Add the butter and pulse until the mixture is crumbly. Pour into a bowl and rub it with your fingers until it starts holding together. Sprinkle evenly on the apples. Gently fold the border over the apples to enclose the dough, pleating it to make a circle.

Bake the crostata for 20 to 25 minutes, until the crust is golden and the apples are tender. Allow to cool. Serve warm or at room temperature.

I use the recipe from the old Betty Crocker red and wht check cookbook and tweak it a bit.

5 cups sliced apples (I dice mine becuase I like chunks instead of slices)
2-4 T sugar
1/2 C rolled oats
1/2 C brown sugar
1/4 C flour
1/4 tsp ground nutmeg, cinnamon, or ginger ( I use them all and add a bit more than 1/4 tsp)
1/4 C butter (or margarine it says, but, yucko - bad trans fats, bad)
1/4 C chopped nuts or coconut (I never add these)

Place fruit in an 8x8 pan. Stir in sugar (I sprinkle them with vanilla too because it adds another depth of flavor - bourbon or brandy would be good also. Just a tsp or so) . If the apples are fresh and juicy I toss them with some flour as well.

For topping, combine oats, brown sugar, flour, and spices. Cut in butter until mixture resembles coarse crumbs. Sprinkle over filling.

Bake at 375 fir 30 - 35 min or until fruit is tender. Tonight it took 45 minutes. Sometimes it takes 20. I think it depends on apple freshness.

Here''s the key thing....You have to make fresh whipped cream with it. AND the cream has to have vanilla and sugar in it.

Somethingshiny, I learned how to make apple crisp in 4th grade, LOL! Unfortunately, our recipe was not low fat nor low calorie, plus it was on some mimeographed page somewhere that got lost with my other school papers and is probably in my parents'' attic right now. I will be keeping tabs on this thread and getting the usual fab ideas from PSr''s!

Now, I''m a this and that kinda baker-the worst kind! So these are just approximations.


My apple mixture is as follows:


I don''t know how many apples I use, I never count them and they''re always different sizes. I peel and slice them into my baking dish and stop once it''s full. Then I dump them into a mixing bowl and add:


1/4 cup white sugar
1/4 cup dark brown sugar-packed
1/4 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp cream of tartar ( I have no idea what this is or why it''s added but my mom always added it).
dash of allspice

mix all together and lay apples into baking dish. Top with "pats" of butter


For top "crisp" crust:


1-1/2 cups rolled oats-NOT quick cook! (I add more oats if the mixture is too tacky after I mix it)
1/4 cup flour
1/2 tsp salt
1 tsp vanilla
1/4 cup sugar
a few shakes of cinnamon
1 shake of nutmeg
6 tablespoons of butter
handful of chopped walnuts or pecans (optional)
Mix dry ingredients in a bown until incorporated
Add vanilla
add cold butter (cut up)
Use your hands (clean and without diamonds please) to work the butter into the dry ingredients until it''s crumbly and the butter is fully incorporated. It should not be sticky. If it is, add some more oats.
Sprinkle on top of the apples-sparingly or to cover entire top, however you prefer

Bake at 350 for 30-40 minutes or until crisp is bubbling and top is brown

 
Zoe, do you ever check out www.allrecipes.com? It is my all-time favourite recipe site (and i do A LOT of cooking). I like it b/c home cooks rate the dish out of 5 stars. If you get a recipes with quite a few ppl who have given it a 5-star rating then it is pretty safe to assume that if you make this dish yourself (properly of course) it will be great.

Did a quick search for apple crisp...this one got an average of 4.5/5 stars from over 1000 users:

INGREDIENTS
10 cups thinly sliced apples
1 cup white sugar
1 tablespoon all-purpose flour
1 teaspoon ground cinnamon
1/2 cup water

1 cup quick-cooking oats
1 cup all-purpose flour
1 cup packed brown sugar
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/2 cup butter, melted

DIRECTIONS
Preheat oven to 350 degrees F (175 degree C).
Place the sliced apples in a 9x13 inch pan. Mix the white sugar, 1 tablespoon flour and ground cinnamon together, and sprinkle over apples. Pour water evenly over all.
Combine the oats, 1 cup flour, brown sugar, baking powder, baking soda and melted butter together. Crumble evenly over the apple mixture.
Bake at 350 degrees F (175 degrees C) for about 45 minutes
 
opps--just saw that you wanted a ''healthier'' version

I would either just cut the sugar in 1/2 (it will be a lot more tart, but still yummy) or sometimes I substitute pure maple syrup or honey for some of the sugar. These are still ultra sweet and full of calories, but MUCH more nutritious b/c they are unrefined and full of other health bennefits.

Maybe i''ll try it tonight and let you know how it tastes with some healthier adaptations

I have 2 versions:

Traditional Apple Crisp
4 - 5 tart apples, peeled & sliced
1/2 cup softened butter
1 cup brown sugar
1 cup flour
nutmeg/cinnamon
Cream butter, add sugar, then flour.
Chill for 15 minutes.
Fill buttered pie plate with apples.
Pat creamed mixture between hands until flat. Lay over top of apples. (May be done in pieces).
Sprinkle top with cinnamon and/or nutmeg.
Bake @ 425 deg. for 10 minutes. Reduce to 350 deg. & bake for 20 minutes.
Serve with ice cream!
I usually double the amount of crisp! Obviously not healthy, low-cal stuff. I have used Splenda and it works just fine.

And I found this one last year. It might even be another PSer''s recipe but it''s tasty and a bit different.

Crockpot Apple Crisp with Coconut
8 Granny Smith apples
1 cup sweetened, flaked, coconut
1 1/3 cup brown sugar
1 cup flour
1 cup oats
1 1/3 cup butter
cinnamon (to taste)
nutmeg (to taste)
Butterscotch or Caramel ice cream topping (to taste)

Peel, core, and slice apples. (I added these to a buttered crockpot.) If you wish, drizzle Caramel or Butterscotch ice cream topping over them. Mix coconut, brown sugar, flour, oats and butter. (Add cinnamon and nutmeg to this mixture if you wish.) Knead the mxture until it is well blended. Drop on top of apples. Cook on low for 4-6 hours.


This can be served as is or with whipped cream or vanilla ice cream.

 
Oh I looooooves me some apple crisp! And we''ve got a ton of apples sitting in our kitchen b/c we went apple picking last weekend -- yay!

Very curious about that coconut crockpot recipe -- so the crisp actually crisps in the crockpot? It doesn''t get soggy?

Thanks for the email Kaleigh....ok - I hunted for my recipe but couldnt find it - I had a pic with it - I''ll tell ya - it was on the posting of the gal on PS who had started making deserts for restaurants.

But without the pic, I will post my recipes...I have 2 that I like - one has oatmeal for those who love that crunchy crisp, and one does not - but is very very good.

Brown Betty

6 cups peeled, cored and sliced cooking apples
3/4 cup granulated sugar

Streusel Topping

1 1/4 cups all-purpose flour
3/4 cup packed brown sugar
1/2 tsp. salt
1/2 cup hard margarine or butter, cut up

Place apple slices in ungreased shallow 3 qt ( I use our glass 9x13) casserole. Sprinkle sugar over top.

Streusel Topping: Combine flour, brown sugar and salt in medium bowl. Cut in margarine until mixture resembles coarse crumbs. Scatter evenly over apple. Press down lightly. Bake, uncovered, in 375 degree F oven for about 40 minutes until apple is tender. ( Serves 8 )

Serve warm with french vanilla ice cream is awesome - lol - or whipped cream or whatever you like. I can guarentee you will love this and crave more....utoh...gonna have to get some apples - lol now I am craving it again!



Apple Crisp

1 cup all-purpose flour
1 cup minute rolled oats
1 cup lightly packed brown sugar
1 tsp cinnamon (heaping)
Cut in 1/2 cup hard margarine

Mix: 1/4 of crumb mixture in apples and spead in buttered 9x13 dish ( about 4-6 cups of peeled, cored and sliced baking apples)
Cover with remaining mixture and pat down
Bake at 350 degree F oven for 35-40 minutes until apples are tender.

Serve warm or cold with cream or whipped cream.

Hope you enjoy these recipes - they are both delicious!!!
 
the minute oats are the quick oats - couldn''t think of the right word there - lol
I imagine you can use the old fashioned oats too...:}

We have one but I haven''t tried it yet.

It is really super easy Zoe! I just made some tonight, YUM! Basically if you just throw some apples and sugar (or splenda!) into a pan, mix some brown sugar, butter, flour, oats, and spices in, you can''t go too wrong! So just pick a recipe that seems easy and you''ll be FINE! Even using the oven.

As for the apple peels, it''s a personal thing. Sometimes I do and sometimes I don''t, I like it both ways! But the peels don''t get super soft so they sometimes can get lodged in your teeth.
 
I LOVE CRISP!! We recently just got back from our house in NC and we brought back more peaches than we could figure out what to do with! My Mom gave me her fav recipe for crisp, and it was to die for. My boyfriend isn''t a big fan of baked goods, but he couldn''t get enough!

1 ½ C. Oatmeal
1 ¼ C. Flour
1 C. Brown Sugar
¼ t. Salt
½ C. + 5T. Butter/Marg
2lbs. Peaches (Use whatever fruit you want)
½ C. Sugar
¼ C. Cornstarch

Combine the 1 C. flour, ½ C. brown sugar, and mix with ½ C. unmelted butter.


Put into bottom of 9x9 glass dish. Bake @350 for 15 mins.


Combine Sugar (white) and cornstarch & toss with peaches (your fruit).
Put on top of baked 1st layer.
Topping:
Combine Oatmeal, ½ C. brown sugar, ¼ C. flour, 5T. Butter.

Sprinkle over peaches in the glass dish.


Bake @350 25-30 mins or until brown and bubbly!!


So yumms!!!
 
Oh Zoe, it''s so easy! Peeling and slicing the apples will take you all of 10 minutes and it is sooooo worth it! You will be so happy when you are eating it later!!!
 
Here is a low fat version from Weight Watchers (8 servings) 1serving approx 250 calories

Ingredients
4 large apple(s), peeled, cored, cut into 1/8-inch slices (6 cups sliced apples)
2 tsp fresh lemon juice
3/4 cup packed light brown sugar, divided
2 Tbsp Minute Tapioca, or other brand
1 tsp ground cinnamon
1/4 tsp ground nutmeg, or freshly grated nutmeg (fresh preferred)
1/2 cup all-purpose flour
4 Tbsp unsalted butter, melted
Instructions
Preheat oven to 400ºF. Place rack in bottom third to middle of oven.

In a large bowl, toss together apple slices, lemon juice, 1/4 cup of sugar, tapioca, cinnamon and nutmeg; let stand for about 30 minutes.

Spoon apple mixture into an ungreased 9-inch square baking dish, or glass or ceramic pie plate; cover loosely with aluminum foil and bake for 30 minutes.

Meanwhile, to make topping, in a small bowl, combine flour with remaining 1/2 cup of sugar; mix until completely blended. Add melted butter; work in thoroughly with fingertips.

After pie has baked for 30 minutes, remove from oven and discard foil. Sprinkle topping over apples and bake, uncovered, until apples bubble and topping turns golden, about 35 to 45 minutes. Cool at least 2 hours before serving. Slice into 8 pieces and serve. Yields 1 slice per serving.
 
Internet was down last night so I couldn''t access any of these yummy-sounding recipes, so I went with my old standby apple crisp recipe, which is tried and true (and similar to somethingshiny''s but I use cold butter instead of melted):

Preheat oven to 375.

6 apples, peeled and sliced into a 9x9 pyrex dish

Mix together:

3/4 cup flour
1/2 cup white sugar
1/4 cup brown sugar (or however you want to mix up the sugars: all white, all brown, some of each)
7 tbsp butter (a full stick is a bit too buttery for my taste)

Cut this all together until you have pea-sized pieces of butter.

Pour 1/2 cup water over apples. Sprinkle with cinnamon, nutmeg to taste (I just used "apple pie spice" that I had from C&B so that may have other things in it as well: cloves? allspice?). Cover with flour/sugar/butter topping and bake until bubbling and slightly browned (~45 minutes).

It''s really tasty -- BUT for some reason last night my apples totally mushed up, so it''s basically like apple sauce with topping

I mean, it still tastes really yummy, but Ive never had that happen before. I used a combo of Macs and Cortlands so maybe I just used the wrong apples, although I could''ve sworn that Corts are for baking?
 
I have many, many recipes for apple crisp and apple brown betty and apple pan dowdy and everything else. I made one apple crisp recipe in quantity in a crock pot last year or the year before when Pricescope got me to buy another slow cooker about 28 years after the first one! And I have to mention a book I have called, The Apple Connection. I believe I also have one of the same series for cranberries and for blueberries. It has a lovely, homey set of recipes (apple fritters, apple dumplings) ...and I have written some of my own recipes into the back to keep them close by. I know one can buy these books all over New England, but I suspect that one can buy them on-line and wherever cookbooks are sold, too. They are spiral bound and inexpensive.

Just wanted to note that I made the apple crisp recipe I posted from Allrecipes.com---it was delish! Quite sweet so cutting back the sugar would work just fine.
But it was super easy, crispy and sweet on the top and the apples were cooked just perfectly. YUM
 
This will be the easiest apple crisp you will ever make.

By a mix from Homemade Gourmet (www.homemadegourmet.com chances are there''s a million reps in your area or try ebay to get it cheaper). Then all you need is one can of COMSTOCK Apple pie filling (don''t buy any other brand. i''ve tried them all and this is the best) and one stick of butter.

In 30 minutes you''ll have the best apple crisp ever :-)
