Question for people who did cookies/baked goods at their wedding, either as favors or as a cookie bar. When did you bake your cookies? And do you have any totally kickin'' recipes to share?

i used to have an amazing chocolate chip cookie recipe--the secret ingredient was a box of instant vanilla pudding mix. if you are going to be trying out some recipes, you should look for one that has this ingredient because they were phenomenal!

Cindy, I wouldn''t want to put your FI on the spot but if he has an "OMG ABSOLUTELY LOOOOVE" cookie recipe that''s relatively easy that''d be great. But if he can tell me what''s the best time frame to bake, package etc that''d be even better.

Coco, I''ll look for the vanilla pudding as an ingredient. Thanks for the tip! FI loooooves chocolate & chocolate chip cookies, so that might be a winner.
 
For the timeline, my mom asked aunts, cousins, family friends, etc. to each bake some cookies. They dropped them off at our house before the rehearsal dinner and we got them all plated. We had M&M cookies with our colors (blue/purple), cookie press, lemon bars, buckeyes, snowballs, baklava, pizzelles, and also ordered sugar cookies from a local bakery that had fancy icing. It definately never hurts to ask family/friends for help! I know my mom was super grateful!

Our wedding was last summer, and I know that the lemon bars went super fast because they are so refreshing on a hot day...I didn''t get to have any! I''ll try to find a recipe for you!

OMG! My friend is a chef and she gave me this recipe for choc chip cookies. BEWARE they are addictive and will destroy your diet!!!

The trick is to undercook them slightly, take them out of the oven just as they start to turn golden and are still soft, they will stay gloriously chewy when cool. If they are crispy in the oven, you have overdone them.

Sorry if you are not in metric, but it''s worth converting this recipe, trust me!!

Choc Chip Cookes:

250g butter (salted, real butter, don''t use unsalted butter)
250g caster sugar
180g brown sugar
2 teaspoons vanilla essence
3 eggs
300g choc chips (dark chocolate)
500g Self raising flour
pinch salt

- make sure eggs and butter are at room temp

Cream butter and sugars.
Add vanilla essence, and eggs (mix with beater until fluffy)
Using metal spoon, stir in choc chips and pinch of salt
Add sifted flour and mix to combine.

Roll into small balls (will spread) and place on greased oven tray.

Bake in oven at 180o Celcius (15 mins? I don''t even know, I just know when to take them out, you will need to experiment.

I''m thinking of having a croquembouche as a wedding cake (and tried , unsuccessfully, to convince my FI to make them :p)
 
Cindy, Aw, maybe you can convince FI to make it for your rehearsal dinner? I love the sound of a croquembouche for the wedding. :) Maybe your anniversary or if you have kids, a christening. Mmmmm.... I think I''m going to just stick with cookies. I think it''ll be easy and doable, since we''re DIYing a lot of stuff.

Honey thanks for the recipe. I''m going to convert it to non-metric and give it a whirl I''ve been experimenting on different cookie recipes and always come back to chocolate chip cookies. An oldie but goodie.

i asked my FI and he said you should bake the cookies about two days before the wedding. He does have a gazzilion recipes, but he can''t remember where the heck they are... There you go... sorry about that! LOL

I could give you a bunch of recipes, but I''d have to type them all up, and I just don''t have the time right now, PLUS they are all in weight measures as well as HUGE amounts (100 dozen cookies anyone?). What I will suggest though is checking out Cooks Illustrated (the magazine/website) OR trying out some recipes from Joy of Cooking. Other books have good recipes too. I''ll think about it and try to get back to you.
 
I''m doing almond shortbreads that I''ve been baking a month in advance and freezing to avoid a mad rush 2 days before our wedding (on the 17th July

) and i''ll be icing them about 3 days before and storing in an airtight tin. i think you can freeze most cookies as milk, eggs and chocolate all freeze well
 
My older sister is making her delicious chocolate chip cookies for favors for my wedding this Saturday. She actually made them all today (and just finished!) because she is coming from about 4 hours away tomorrow so obviously couldn''t make them tomorrow. She doesn''t like to freeze her cookies so she made them all today-she made 250! Hope this helps!

We did cookies for our favors; 3 cookies for each guest in a box. DH loves to bake, and had a marathon baking day the Thursday before our wedding (wedding was Saturday).

I wanted to have my favorite Coconut Cornflake Cookie, but the recipe calls for a ton of butter and coconut, and I realized it''d be a bit expensive to make 120 of them, so I found this recipe: http://allrecipes.com/Recipe/Chewy-Crispy-Coconut-Cookies/Detail.aspx. They were really yummy! And I like allrecipes.com, because it converts the recipe for you, if you need to scale it up.
