The Good News:
M is getting promoted at the end of February! He''ll get to make his own hours, so no more opening or closing the store, plus he''s getting a HUGE raise

The Ehh (not bad) News:
Because he''s been working so hard, I still don''t have my sparkly. I think that he is waiting until he is in a place at work where he can really feel like "I am man, I am strong, I provide for my woman!" Plus, we''ve basically been acting engaged since he bought the rings in December, he''ll introduce me as his fiancee, etc.

My Project Today:
Make the infamous "Engagement Chicken." I really just use the kitchen for the microwave and coffee maker, so I''m a little nervous! Have any of you tried the recipe before? It seems pretty simple and totally delicious. Hopefully, it will put some good sparkly Juju into my life, and give M a break from being the cook!

I''ve tried it, but never as intended (didn''t serve it to him, just made the recipe on my own to see if it lived up to the hype).

It''s a tasty recipe, but waaaaay off on the cook time (depending on your oven, it could be off by as much as an hour). If you don''t have a meat thermometer, I''d get one -- you don''t want to serve him undercooked chicken!
 
I tried it and it was great (and it worked!)

The way I made it:

- Keep the chicken out for 15mins to get to room temperature. Wash inside and out with warm water and pat dry with paper towels.
- Squeeze 2 lemons and mix with 50 grams melted butter, salt and pepper
- Rub lemon/butter mixture under chicken''s skin, and pour the rest all over it. Stuff with 2 lemons that have been pricked with a fork
- Roast for 1.5 hours for a medium chicken (turning once)
- Mix the juices that run out with chicken stock and a bit of flour, to make a gravy (the most delicious part!)

Just finished eating, M is cleaning up the delicious dinner.

Right now I have one happy man. As soon as he got a whiff of the chicken while it was in the oven, he got really handsy

I have never seen him eat a meal like that. He was eating with both hands- fork in the right hand, and he would pick up food in the left hand.

The only thing I changed from the original recipe was adding some olive oil to the lemon juice that I put on the chicken, and cooked it for 1 hr 35 minutes. I also made steamed asparagus with lemon and olive oil, and some Spanish rice (ok ok... Rice A Roni). It was totally delicious, and M said it is definitely going to be part of our rotation now (little does he know the secret!). I''ll just have to wait and see if the ''engagement'' part works!
 
I''ve tried this. A long time ago... still waiting... (maybe I didn''t make it right). I agree about the extra cook time. It sounds like it went really well for you. Let us know if it works soon!

Even if engagement chicken doesn''t get you a ring, it''s a fantastic recipe that always impresses guests. It''s one of my favorite dinner party dishes!

M just told me that he had the big "I''m going to propose" conversation with his parents!

Ok, I have seen this engagement chicken recipe posted about a million times on PS. What the heck are you supposed to make if your SO is vegetarian and you are too? Engagement Tofurkey? Toficken? Just curious...this is a just for fun question.

Good question!! It would probably be pretty easy to coat some tofu the same way and then cook it up. I''m not a tofu expert, but I bet it would be pretty yummy. Test run, Monarch64??
