How to play with layout

I’ve seen many pictures here with organized layout of center stone and melee... do you all use tape to do that? There seems to be an apparent approach to do so. I tried to put them on a flat surface, on a piece of sponge. They just roll everywhere...

I’m confused how they’re rolling are they not faceted?
I use packing tape but also sometimes I just use a table and move things around with a tooth pick as to not move them about too much.

Thank you both, tried and worked well! Rewording: maybe not rolling around the table, but they never face in the same direction as I’d wish them to.
 
I don't know what it's called in the US but do you have something called BluTack? It's something you can put posters on the wall with that doesn't mark the wall. You can get a blob of that and push in your stones - it doesn't harm the gems or scratch them.

Blue Tack I think would be perfect
 
I have seen some sellers use tape. There are also gem boxes with a gummy surface that are good for playing with layouts.
 
For anything other than color,
(Because seem to have butterfingers)
I snap a picture and play with cut/paste apps. Adobe photoshop sketch, or more rudimentary one, you doodle

That is a great idea to snap them and play! I probably will try it on easier version, MS ppt.
