I''m looking for suggestions or recipes for portable fruit stuff. This is for breakfast & snack.
B has been having health problems recently and fruit seems to really help him.
He doesn''t like to take just fruit to work (apple, banana, whatever) and he needs to limit the carbs.
I had been making muffins because they are easy to carry and don''t make much of a mess. Now we find out that he has to reduce the carbs as much as possible.
He has access to a refigerator/freezer and microwave but I found before that if the food was down the hall he would usually not bother with it. He gets really involved in his work (computer stuff) so he only really eats or drinks what is right next to him.
I''ve been doing fruit smoothies for him. Lots of cut fruit at home. But he''s getting tired of the same stuff.
Any ideas? Is there such a thing as a very low carb muffin?
