I have a ring like this. I don't care for the baguettes.

I think if you wanted side stones that are a different shape, the whole ring setting would likely need to be redone.
Is it possible to replace the baguettes in the ring pictured with stones of a different shape?

Can it? Sure.
I think it depends on how willing to and creative the jewelers bench is to the project and how picky you are on the look of the results.
It may be more expensive in labor to re-work your existing setting to accept different stones, than a brand new setting though.
I’m sure there’s plenty of rings out in the world that have had parts sawn off and other parts soldered/welded on.
Would I ask for two long princess cuts to be sourced and wedged into the baguettte area, or alternatively all the bars sawn off and peg heads put in there? Probably not. Even if I could find someone who willingly and lovingly wanted to do that labor.
