Like pasta, it is a huge market with noodles with different types, brands and flavours!

Given the choice, I would rather have noodles than rice.

I have a variety of noodles at home, not surprising as I am HK Chinese by origin.

Rice vermicelli and flat noodles, straight to wok thick udon noodles, thin and medium egg noodles, Shin Cup which is my favourite instant noodle, other variety of instant pot noodles, and ramen noodles.

How appropo, I’m making my famous braised beef noodle soup as we speak, College kiddo #1 coming home from SD. Using this fresh noodle that tastes homemade…cooks in 3 minutes, like fresh pasta.
