Advice needed for accent stones

I hope I am posting this question in the right place!

My fiance just proposed to me on Saturday and we are in the process of designing a ring! My stone is a 6mm round green sapphire which he gave to me in a presentation setting. My question is about accent diamonds. We are wanting two pear-shaped side stone diamonds approximately 3mm x 4.5mm. Our jeweler is estimating $800 - $1000 for the two diamonds which they have yet to order. We originally asked if they could order in a few different sets so we can pick the ones we like that work with our tight budget (fiance is an elementary teacher).

The jeweler emailed us stating, "I hope you don’t mind us only ordering in one set of pear shape diamonds. We will pick out the absolute best set of diamonds but we cannot order in two sets because they would not be on loan like our larger diamonds we order in."

However, I am thinking that we might not want the "absolute best" diamonds available because I am worried they will out-sparkle my sapphire. I want the three stones to look really nice together, and I worry about the diamonds "competing" with my sapphire, which I want to take center stage.

Is there a grade of diamond that looks best next to a sapphire? Should I not worry about the diamonds outshining the sapphire? Any "red flags" in the information they are giving me that I might not be aware of?

Thank you!!

If you are designing the ring, then it is all custom, not a stock setting. What about contacting some of the PS vendors and ask them to search out pear pairs with photos to send you and their GG evaluating them? The B&M jeweller won't be able to make the $$ from marking up diamonds to you, but you will be purchasing awesome quality stones by a trusted vendor.

I think your sapphire will take centre stage due to the colour and size. I'd still suggest F, G or H colour and at that size, SI1 would be a good way to save some money.

That's what I'd do, if it were me...

Thank you for the tips, Enerchi! I am an overthinker and get especially paranoid when I know very little on a subject!
