cupcakes sans baking powder?

Is there any way to bake cupcakes without baking powder? I have baking soda.... And pretty much everything else I might need. I do t have buttermilk though, which I've seen in some red velvet ones.
 
I've got a good feeling I have to go to the store...but I just went :blackeye:
 
baking powder gives the cupcakes shape and texture. Without it, you risk ending up with cupcakes that are a bit hard and stumpy. Sorry Niel:(
 
Yeah, I had a feeling. Can you make a general cake? Lol can you tell I really don't wanna go to the store.
 
You can use cream of tartar and baking soda as a substitute for baking powder - I think it is a 2:1 combo - so if you need 1-1/2 teaspoons of baking powder, you'd substitute 1 teaspoon cream of tartar and 1/2 teaspoon of baking soda... of course, this only helps if you've got cream of tartar and baking soda in your pantry!

Haha right. I don't exactly have that either. I made the cupcake recipe I posted up thread. I replaced the olive oil with vegetable oil but pretty much followed it otherwise. They came out great and in a cupcake shape.

I think that recipe is called a wacky cake?

This is a chocolate cake recipe that has NO baking powder, eggs, or milk.
It's my go-to cake recipe. Of course you can do cupcakes with this as well.
I make this at least twice a month, as DH and I love dessert after dinner.
It is super easy, and doesn't call for eggs, milk, or baking powder. It was my grandmother's recipe, and she called it Lenten Chocolate Cake, but it is also called Wacky Cake in some old cookbooks. It is dark, rich and so good!

Wacky Cake
2-1/4 c. flour
1 tsp. baking soda
1 tsp. salt
1-1/2 c. sugar
4 Tb. cocoa powder(heaping)
------------------------------
1-1/2 tsp. vanilla
1-1/2 tsp. vinegar
1/3 c. veg. oil
1-1/2 c. water

Sift dry ing. together, then add wet ingredients.
Whisk vigorously, (or blend with mixer)
Pour into 11x7 (or similar size) pan , sprayed with Pam.
375 degrees, 30 minutes
Top with your favorite frosting

Yeah my recipe was pretty much that I just put coffee in instead of water.
