I think the reason this works is because of the "martini" setting for the side rounds. The 3 prongs trick the eye into seeing a more triangular (trillion) shape. In other words, it wouldn't look right if the rounds had 4 or more prongs. What do you guys think?

I think you're right - plus in this setting, as in the ring with sapphire sides that Chrono posted, a small sliver of each round stone is obscured by the center stone when you look at the ring head-on, effectively changing the shape of the side stones. msop04, that's a beautiful trellis setting, by the way!
