I have 10-15 vegetarian recipes in my repertoire-mostly lasagna, pastas and salads- but would like to expand my range and eat vegetarian more often. I''m not planning on being strict about it, just transitioning my family to more and more vegetables and grains and fewer animal products. I have four kids so I may have to try different foods to get some hits.

Some of our PS''rs have posted dishes on another part of the forum that I will try but I am wondering if any of you have cookbooks or websites that you particularly like for vegetarian meals? I find that some cookbooks and cooking websites reliably provide good recipes, and others not so much, so I would love to get some first hand recommendations. Of course, dishes that I can cook or prep ahead of time or are quick and easy would be a plus.

Disclaimer - I'm new to enjoying myself in the kitchen, so I can't vouch for ease/impressiveness/authenticity

I like this one:

There are a lot of easy recipes that taste really good - her "Asian" choices especially always seem to turn out well for me, and there are links to other websites. There's not a lot of meat substituting though - the recipes are really mostly vegetables to be eaten that way, as opposed to "soy burgers" and "tofurkey", if that makes sense?

I was raised vegetarian (my parents are devout Hindus) and when I got to college I went meat-crazy. Now that I'm out and feeding myself, though, with no pressure to choose one or the other... I don't even really like meat anymore! Very strange how that worked out

- it really is easier to eat well, though.

Bittman''s How to Cook Everything Vegetarian

I like photos for every recipe and like things to either be very quick or cook longer but can be left alone. I use this cookbook a lot lately, but do tend to fall back on the favorites so haven''t tried as much of it as I''d like to: Easy Vegetarian on Amazon link

Oooh! I love veggie cooking websites/blogs!

It''s a couple that tries to only spend $30 a week on groceries. They''re vegetarian and have some really good, pretty simple recipes.

I''m not sure if you''re interested in vegan stuff too, but there''s a bunch of vegan recipe websites/blogs. This one was pretty good. She''s dropped off on posting, but the archive of recipes are really yummy. The vegan donut recipe is too die for!

A vegan recipe forum that has yielded some stellar recipes and lots of tasty meat fakeouts.

Any of the cookbooks by the Moosewood restaurant are very good (Enchanted Broccoli Forest comes to mind). The restaurant was one of the pioneers in the world of vegetarian dining and the stuff in their books is very good! My family is not vegetarian, but my mom has almost all of their books and has cooked from them for years. (if anyone's in upstate NY, I definitely recommend a visit to the restaurant!)

Here's a link to Amazon's list of Moosewood books: http://www.amazon.com/s/ref=nb_ss?url=search-alias%3Daps&field-keywords=moosewood
I'm a fan of the Enchanted Broccoli Forest and the basic Moosewood Cookbook.

ETA: For blogs, 101 Cookbooks is very good and all of her recipes are vegetarian.

I have some veggie cookbooks but can''t remember the titles because I never use them. I''m vegetarian, but have only been ~4.5 years so mainly I just make the same things and omit the meat.

I second the idea about the Moosewood Cookbooks, I am not veggie anymore but I use theire cookbook all the time (there is a killer brownie recipe in there too, mmmm).

Thanks everyone, these look great!

When I became vegetarian years ago I found that "Vegetarian Times Complete Cookbook" was helpful. "Vegetarian Times" also publishes recipes in their magazine and on their website.

Well, I''ve been a veggie since I was 5 years old (by choice), and I LOVE to cook and eat (and so does most of my family). My two favorite resources, hands down, are the Greens Restaurant cookbooks by Annie Somerville - excellent for more elaborate and special-occasion dishes, I''ve never had one that wasn''t delicious, and there are also some wonderfully creative ideas for normally mundane things like salads, pastas, and sandwiches.

For a website, this one is my absolute top favorite - there are tons of recipes, all the ones I''ve tried have been tasty, pretty much all of them are healthy and easy to make, and there''s a wide variety. You can subscribe to the website too, and they will basically send you a new recipe each week, which is kind of fun - it helps remind me to try and make new things.

Thanks for the additional suggestions. I''m going to be quite busy trying them all out!

I''ve bookmarked the websites and might need to go cookbook shopping.

Allrecipes.com has a great recipes that are fun and quick. Just put "vegetarian" in the search box. I find my family will eat pizza and veggy pasta dishes without complaint. The trick for my family is that it has to be homemade. My DD told me that the average American consumes 21,000 animals in their lifetime. I really had no idea.

MOOSEWOOD MOOSEWOOD MOOSEWOOD!!!

The recipes are all easy and all taste great. What more could you want?

My fave is Moosewood Cooks At Home, which is easier recipes for every day. My copy is falling apart, it is the only book I use.
