Help me choose between two diamonds

First off, I have been working with Matt at Good Old Gold and he (and that company) are as good as I had hoped while lurking on this forum. I had him look at three stones, a 2.75 RB G SI1, 2.85 G SI1, and a 2.90 RB F SI1, and create the following data profiles:

All were GIA 3X and Matt felt they were all had "unbeatable" optical performance. The 2.75 G SI1 was 100% eye clean and the 2.90 F SI1 was nearly eye clean at four inches but totally eye clean at six inches. After ruling out the middle 2.85 stone, the pros on the 2.75 G SI1 are the superior optical symmetry (GOG Hearts and Arrows) and stricter definition of eye clean. The pros of the 2.90 F SI1 are higher color grade and perhaps better value. Assuming the price per carat was nearly equal, would the experts here trade from an F to G color for the other benefits of the smaller stone? I see no face up color difference in the video and either size would meet my needs but even if the price per carat was equal, the F colored stone might be seen by some to be more competitively priced. So as not to color your views, I'll withhold Matt's choice between the two.
 
I'm not an expert, but I'd go with the "F". While I see your point about the G's "superior" optical symmetry, its performance in the video didn't appear to completely blow the socks off of the F (in my opinion). So Matt was right about the "unbeatable" optical performance of the suite of diamonds.

To be able to get an F color stone for a few dollars more is a win-win in my book, so that's the choice I'd make, but I prefer whiter stones so color is an attribute that carries quite a bit of weight for me. If, on the other hand, seeing the sharp bold flashes of perfect arrows was my priority then I'd go with the G in a heartbeat, because watching the arrows flash in and out was captivating. I just don't look at diamonds that way IRL, I'm really more taken by the beauty of the overall ring and the whiteness of the center stone from every angle in every lighting environment, so that's why I'd pull the trigger on the F in this case.
 
The 2.90 for a few reasons - Better color, it's bigger and the aset and diamxray both look better and the 2.75 is a bit deep so it'll face up smaller than it should. If you can afford 4k more, that would be my choice.
 
I noticed that the 2.90 ct stone is relatively shallow so it faces up bigger but even though you see the difference in the magnified video, it is hard to imagine that a 0.25mm difference is that noticeable on a 9mm ring. It is interesting that you like the ASET better on the 2.90 stone since the intensity of the blue is so much less uniform. Thank you for the responses so far.
 
I would choose Color over Clarity especially in this case as the video shows both the stones look quiet similar, I would go for 2.90ct
 
The two stones that you have selected 2.75ct & 2.90ct
2.75ct G/SI1 - 100% eye clean, Depth 62.40 Table 56 EX EX EX 8.92x8.96
2.90ct F/SI1 - Near eye clean , Depth 60.60 Table 58 EX EX EX 9.21x9.22 Fluo - Medium

I think I like 2.90ct more than 2.75ct, because the depth is perfect in 2.90ct which makes the stone overall
better apart from that 2.90ct looks bigger and another reason is Fluo, I kinda prefer little fluo in the stone, it
gives nice rainbow lighting effect. I would think 2.90ct is better.

If its little hard to decide I would suggest to buy both the stones, take a look at both the stones together side by side
than return the one you don't like, these days online stores are giving minimum 30 days return policy and also they
provide Free Return shipping, which is win win for you in my opinion.
