Oh, I've just been through this whole tortuous process! I bought a tempurpedic (can't remember the model, it has a cushiony, plush quilted top). I've had three nights on it now and so far so good, but nothing amazing. Comfortable, not too quicksand-like as I'd feared and it helps (although doesn't eliminate) lower back pain from an old fracture.
I don't find it hot at all, and it's COLD at night here already, so that would have been no bad thing - it doesn't seem to get hot at all. I was a little disappointed by that, I'm always cold in bed.
We had a pure latex mattress before that, and it isn't hugely different - I think you'd notice more of a difference going from a traditional sprung mattress, though.
I was scared that if I slept on my back, my somewhat heavy bottom would sink into the mattress and I'd end up folded like a taco, with only my wrists and ankles showing by morning... hasn't happened so far, it's fairly firm.
