Recipe for Alcoholic Popsicles ;) ???

I just made margarita popsicles and I also made coconut/pineapple with strawberry chunks (rum added).
Anyway, I was kinda winging it on the coco/pineapple ones.
I know with the addition of the alcohol that makes freezing an issue.

I can''t find much online to help me. I want to make some more, but I don''t
want to waste my time and booze!!

Any ideas? Ever done this?
 
Since alcohol doesn''t freeze...I don''t think this is possible.
 
hmmm. . .once I tried making beer popsicles and I don''t think they froze right. . .more slushy! lol
 
I know, it''s gonna be a gamble if they freeze or not.

Guess I better tell Emeril Lagasse! I found one of
the recipes on his site!! ha ha!
 
I made margarita jello shots (both Lime, and then strawberry with some fresh strawberries cut up in it) and then froze them and they were delicious.

Otherwise it works sometimes. They sell kits for making alcohol popsicles, so it can be done. I think you just have to find the right mixture of stuff. Can''t be toooooo much alcohol or it won''t freeze right at all.

Yes, too much alcohol and there''s no chance of freezing.
The coco/pineapple rum ones are frozen solid!
But the margarita ones are still not frozen solid. And they were
the ones with the recipe!
 
I just gave this book (Pops!) and a set of ice pop molds as a birthday gift to my best friend and she LOVED it. The book has recipes for alcoholic popsicles in it. The author suggests soaking the fruit you want to use in the rum first before making your popsicles, or add very little booze to the popsicle mixture so that the other ingredients freeze around it.
