I have been tasked with making dessert for our family holiday gathering. I will be traveling about an hour by car from home to my cousin's house where our family is having dinner. I don't bake much and I would appreciate PSer's recipes for easy, delicious desserts that travel well.
 
We're going to a Christmas party about about an hour away, and I'm planning on bringing pumpkin pudding crunch. There are several recipes out there, but the one I had on Thanksgiving was the one below. My mom saw it on Live with Kelly and Michael and she e-mailed me the recipe. It's really good! (I put another recipe on here somewhere, and other variations are called pumpkin pudding cake.) ETA: I just noticed that the recipe says to chill for an hour before serving. I'm not so sure this one would travel well, unless you could keep it chilled with ice packs in a cooler. What do you think?


Ingredients

2 sticks Salted Butter
1 large can Pumpkin Puree
3 large Eggs
1 large can Evaporated Milk
1 cup Sugar
1 teaspoon each Vanilla Extract & Cinnamon
1/2 teaspoon Nutmeg
1 box Yellow Cake Mix
Steps

Pre-heat oven to 350 degrees. In a large bowl add pumpkin puree, followed by three eggs, evaporated milk, sugar, vanilla, cinnamon, and nutmeg. Stir until mixed together.
Pour the mixture into a baking dish, then drizzle the dry yellow cake mix over it, like a topping.
After melting two sticks of butter, drizzle the butter over the top.
Bake for one hour at 350 degrees, and then cool for one hour in the fridge before serving.
 
Christmas is sticky toffee pudding time.

It is really hard to mess up, so I'm sure any recipe you use will turn out delicious.

But I always use the recipe from Desserts by the Yard by Sherry Yard, it is on Google Books.

Thanks for posting this recipe, Zoe. I haven't made my Easy Cherry Cobbler recipe in years, but my family protested when I stopped making it for Christmas every year. It is what is considered a "dump cake"...and your recipe, here, reminded me of it. This looks very easy and incredibly delicious (and unhealthy). I am printing it our tonight and putting it into my three-ring Holiday Recipes binder! I may, even, make it before Christmas!

I'll also post my Easy Cherry Cobbler recipe. It is terribly easy and always a tremendous hit.

Easy Cherry Cobbler

This recipe is great for Christmas because the red makes it look Christmas-y.

1 can cherry pie filling
(I use 1/2 can pie filling and 1 can tart cherries instead)
Spread in greased 9 x 9 pan
1/2 box cake mix (yellow or white)
Sprinkle over cherries
1/2 cup melted butter or margarine
and
1/2 cup water poured over cake mix
1/2-1 cup chopped nuts sprinkled over top
Bake at 400 degrees for 1/2 hour

Can be served with vanilla ice cream or whipped cream. Since I use 1/2 can pie filling for a cake, I always make two cakes. Two are always eaten!

Gypsy, Ina Garten's recipe sounds really good, too.
 
I haven't tried this one yet, but how could it be bad? I'm making it for my neighborhood holiday party on Friday....

Baileys Salted Caramel Chocolate Pie

Ingredients:
6 ounces semi-sweet chocolate chips
1 cup whipping cream
1 tablespoon sugar
2 fluid ounces (4 tablespoons) Baileys® with a hint of Caramel*
1 chocolate cookie pie crust
Coarse salt for sprinkling
Optional for garnishing: shaved chocolate, caramel sauce for drizzling

Instructions:
1. Melt chocolate chips according to package directions.
2. Let cool slightly.
3. Whip cream and sugar.
4. When soft peaks begin to form, gradually add Baileys with a hint of Caramel.
5. Gently mix in the melted chocolate.
6. Spread mixture into pie crust and sprinkle top with coarse salt.
7. Refrigerate for 4-6 hours.
8. *Substitute other Baileys flavors to create different versions.

This recipe contains no more than 0.6 fl. oz. of alcohol

Tiramisu - no bake, plus you can make it the day before (preferable, actually!). I don't like rum, so I add some sort of coffee liquer like Tia Maria or similar.

So so easy and so so delicious! I used the italian style ladyfingers that have the crusty sugar on them, I can find them at any larger super market or italian market in a pinch.
