** What Is Your Favorite Mainstream Casserole? **

i have not made this for years. my version was a little different. it has only four ingredients. ground beef seasoned to taste, mushroom soup (i prefer cream of chicken), cheddar cheese and tater tots. there are tons of tater tot casserole recipes on the net. i would google it and choose the one i liked. it is rather tasty. i will be interested in which casserole makes the cut.

this is a good thread i hope posters continue to offer up different choices.

this is not a casserole but i think most like the cold veggie pizza made with crescent rolls. in case you don''t make it philadelphia cream cheese, mayonnaise and dry ranch dressing make the "sauce" and veggies topped with shredded cheese top it. i find this easy and tasty.

This is really easy & deeeelish:

One pound ground meat or turkey
2 cups really good chunky salsa
tortilla chips
2 cups sour cream
2 cups shredded cheddar or cheese of your choice (more if you''re a cheese lover)

Brown meat, add salsa and simmer for 20 minutes
Break up tortilla chips into bottom of casserole (don''t crush chips; bigger pieces are better)
Add meat/salsa mixture on top of chips
Spread sour cream on top of meat
Top with more broken tortilla chips
Sprinkle chips w/cheese
Bake 350 degrees for 30 minutes

You can add olives and/or scallions on top of sour cream if you want.
 
I make a mean spinach casserole. It appeals to all those categories that you mentioned. Even my 5 year old loves it.

It has frozen spinach, egg, noodles, salt, pepper, nutmeg, swiss cheese, onion and sour cream in it. If you want the specific recipe, just ask.

Geez! Everyone here is such a tease! No one will post a recipe without being asked first! First I had to beg mrssalvo and now I have to beg Alisonfaye! Well, it''s worth it!

Please, Alison, do post your recipe! Every mother on this board needs or will need a recipe that a 5 year old will eat. She will need it for a picky 16 year old if she has a good 5 year old. Trust me!

Also: I will eat anything that has noodles plus sour cream in it. But I need the specific recipe. I thank you :-).

I like it. Sour cream is good. Sour cream is very good. Cheddar cheese in a recipe with sour cream is even better. Black olives and scallions with sour cream and cheddar cheese is very good indeed. I am signing on. THANK YOU, Matata!!!

My mom''s version of a Tater Tot Casserole goes as follows:

1. Place about 1lb ground beef in the bottom of a casserole dish. Season with salt and pepper.
2. Cover meat with 1 can of corn, 1 can of peas, and 1 can of green beans
3. Cover veggies with a can of cream of mushroom soup
4. Top with frozen tater tots

Pop it in the oven at 350 for 50 minutes to an hour and serve. :)

Oh, my! That''s a full meal! And it actually has vegetables in it! It reminds me of the macaroni salad my mother made when I was a child. (I mean in that there are so many vegetables in it. My mother''s macaroni salad was made with elbow macaroni, mayonnaise, and frozen mixed vegetables plus any canned vegetables she felt like adding.)

At any rate, I have never been introduced to tater tot casseroles and they sound like a simply wonderful invention!

Mmmmm these recipes remind me of my childhood. FI had them so often as a kid that he refuses to eat them now. Scalloped potatoes, ziti, and lasagne are as close as he''ll get these days.

Ingredients
4 cups cooked elbow macaroni, drained
2 cups grated cheddar cheese
3 eggs, beaten
1/2 cup sour cream
4 tablespoons butter, cut into pieces
1/2 teaspoon salt
1 cup milk
Directions
Preheat oven to 350 degrees F.

Once you have the macaroni cooked and drained, place in a large bowl and while still hot and add the cheddar. In a separate bowl, combine the remaining ingredients and add to the macaroni mixture. Pour macaroni mixture into a casserole dish and bake for 30 to 45 minutes. Top with additional cheese if desired.

I should mention that I have a one day reprieve from making the casserole. The pregnant friend and her boyfriend are bowling tonight and requested that my daughter bring the casserole tomorrow night. I had done the shopping for the casserole, but decided not to assemble it until tomorrow. The grocery store I went to is not my usual one; I went there because I had to pick up a prescription next door. They had no real fusilli. I had to buy something labelled "mini fusilli" or else substitute another type pasta, which I considered doing. In the end I bought Barilla brand "mini fusilli" and felt silly, however. (I'm rhyming, too.) Everything is going to look as if it is prepared for for little children. Oh, well...as long as it tastes good :-).

In the meantime, keep those recipes coming! I agree with crown1 that this is a great thread!

This is another Tater Tot casserole recipe. Crown1 was right that one can find them on-line. I belong to a couple of recipe sites, so I visited one and did a search. I was drawn to this recipe at first for the rich ingredients, but the review by "Nicki" made me laugh and was the deciding factor in why I chose this recipe over all others to post here! Be sure to read it! (I wonder if the recipe would be too rich for me! Nothing else is! If anyone ever tries this recipe, please let me know what you think!)

Pleasing Cheese Potatoes


INGREDIENTS
1 (32 ounce) package tater tots
3 eggs, lightly beaten
2 (10.75 ounce) cans condensed cream of potato soup, undiluted
1 cup sour cream
1/4 cup chopped green pepper
1/4 cup chopped onion
4 cups shredded Cheddar cheese

DIRECTIONS
Arrange Tater Tots in a greased 13-in. x 9-in. x 2-in. baking dish. In a bowl, combine the eggs, soup, sour cream, green pepper and onion until blended. Stir in the cheese. Pour over Tater tots. Bake, uncovered, at 350 degrees F for 50-55 minutes or until bubbly and golden brown. Let stand for 10 minutes before serving.

"Did not really care for this...I think it was just way too rich for my taste. My son who loves cheesy potatoes wouldn't even eat it...but my husband will eat anything and he ate all the leftovers!"

ROFLAMO. Okay, that's a good point.

See for me, since we have 2 quarts (you read that right) or the sauce in the fridge... it's a matter of buying some noodles, ricotta and mozzerella, some greens for a salad, and a dessert. And then defrosting the sauce and throwing the rest together. SO, it is 'quick and easy' cooking, at least my version of it. And John makes a ton of sauce at least once a month. Ditto on homemade chilli I make a ton once every 2 months... and we freeze about 2 quarts.

But you are right, you were looking for something easy, and I did go overboard! Sorry!
 
This is the best taco dip I have ever tasted...by far. I no longer eat either beef or pork, which limits the things that I can eat, but on Christmas no one could pry me away from the tortilla chips and dip! This dip is wonderful and I demanded the recipe from cousin, Dana. So although this is not a casserole, it is a hearty dip. If anyone is saving recipes, you will want to save this one! Obviously, since it is a dip, one serves it with chips. Our family uses tortilla chips of various kinds. Use whatever floats your boat ;-).

Dana's Best Ever Taco Dip




1 can ( 16 ounce) re fried beans
1 jar salsa ( I use mild, about 16 ounces)
1 can chopped black olives ( about 4 ounces)
1 container sour cream ( 16 ounces)
taco cheese ( or cheddar ) 8 ounces.

Layer it as above ( should fit into an 8x 8 pan) Starting with the beans.
oven 350 .....20- 40 mins...check on the cheese, when well melted it is done.
I like it to start to brown slightly.
 
After posting my mom''s recipe for tater tot casserole I started craving it.

Then REALLY started craving it. As in that is all I could think of all afternoon. I sent my FI off to the store to pick up all the ingredients. Guess what is for dinner tomorrow??? I can''t wait!

I modified a recipe I found on-line, and now that I have tried it I know how I would further modify it if I made it again. I will post the details later today. The only mishap I had was that I dropped the smaller of two pans and lost almost all the unbaked casserole from that pan onto the kitchen floor. Being a Freudian and believing that there are no accidents, I asked myself, what my father would if he were on the phone with me, "Who are you mad at?". The answer, of course, was, "My daughter!". (Who else had caused me to be chopping bell peppers and onions and browning meat?)

The only good part to dropping that casserole dish is that I got to taste some of the unbaked ingredients, which I otherwise would not have. They were so good, that I decided to throw in some other things I had in the house and improvise-in a clean pan-another small casserole, but this time with the intention of leaving it at home! (The first one was supposed to go to my daughter's friends. I had made one big pan with olives and one small pan without.)

OK...details on the actual casserole ingredients later!

One of my favorites is brocolli, rice, and cheese casserole. You can always throw in some shredded chicken as well.

Sorry to resurrect this thread...but I have the stupidest question...

For a tator tot casserole, do you cook the ground beef before putting it in the casserole and baking?

I have to say, in my current pregnant with much morning sickness in the afternoon/evening state, these recipes are finally something that is appealing to me. I haven''t had a home-made meal with meat in it in weeks since all our regulars are making me ill. I''m making the beef stew/onion soup thinger tomorrow!

Deb, what did you end up going with? How did it go over?
 
Nope, I plop my beef in uncooked. I try to get really lean beef or the bottom can end up sort of greasy/watery.

My tater tot casserole is in the oven now and the house is starting to smell yummy!

Why can't my thread be resurrected? I think it's a wonderful thread! I'm not even through posting to it, but I forgot that until I saw it pop up again! And I think your question was a good one, too! I had a similar question while preparing the casserole I made! The recipe called for two green bell peppers and a large onion as well as ground beef (I used Italian flavored turkey) and it had never occurred to me that one wasn't supposed to brown the onion and peppers with the meat (which it did say to brown)...until I reread the recipe! It didn't say to brown the onion or the peppers! I had to decide which way I thought would make a better casserole! In the end I decided that if the recipe had wanted a sauce with browned meat, onions and peppers in it, it could have called for a jar of spaghetti sauce not tomato sauce. So I left most of the onions and peppers in the casserole, unbrowned, for more texture, except for a few that I browned with the turkey just to give it some more Italian flavor. A compromise of sorts ;-).

, but we had an office potluck once where a young lady brought pasta shells in a sauce. Everybody loved it and asked for her recipe. . . . it was the Prego Sauce you pour onto dried uncooked pasta, cover, and set the whole thing in the oven to bake!! No preparing, no mixing, no cooking the pasta first. How easy is that? And it got rave reviews!
