What to look for in Charts? EX or VG ? Polish, Symmetry?

It''s great to search online for diamonds and compare prices. But, what do I look for?
Must I only look at diamonds with EX Polish, EX Symmetry? Is VG ok? I would think that EX symmetry and polish would be the best way to go. Can anyone enlighten me on this matter??
