I am curious and learning so any help is welcome. My question - when were diamonds all hand cut, what cuts, etc. Thanks

Very short answer:

The secretive fashion of using Diamond powder to grind Diamond was discovered in Europe (more precisely Italy) during some time in the late 14th. Century!
The first cut was only by grinding the tops or pointy edges of the octahedrons resulting in a type of point-cut!

Thank you. What years were the Old Mine diamonds cut?

The first known Diamond that was cut to "brilliant" type faceting was the "Wittelsbach Blue".
The first mentioning of this stone historically was at around 1650 +/-

It is a 36.56 carat blue beauty which was part of the Bavarian Crown Jewels until it somehow got into an Antwerp Diamond dealer in the 1950''s...
Another Antwerp Diamond dealer by the name of Mr. Komkommer has received the credit for saving this historic Gem from being recut!

The shape of the Diamond is oval''ish, flat and it possesses a rather large table and an extremely large culet..., but is still considered a magnificent Gem!
