I'm a newbie and I know it's a smaller range than you are considering, but I upgraded from a .72 E to a .91 F. I can tell the .91 is bigger, but it is not so much bigger for me to justify paying more than 2k for it. I only upgraded because I got an excellent deal on my upgrade. I have the same setting and no one has realized that I upgraded the size. People notice when I add a blingy band though.
I would keep the 3/4 right now and upgrade later. Pay off her car or keep it in savings. Get a nice band for the 3/4, maybe a shared setting half eternity? If your fiance is fine with upgrading now, she will probably be ok with upgrading later for an anniversary.
And if she loves the high E color, maybe just upgrade to a .99ct E. Maybe later on she will want to keep the 3/4 for an earring, or perhaps she will decide she would like to keep it for a pendant. If I only wanted my ring and some earrings, a .99 ct ring and 1.50 ctw earrings would pack a nice punch. Or if I decided I'd like a pendant too, I'd use the 3/4 for the pendant and get a 1 ctw set for the earrings. I think having all E stones would be fabulous!
