Christmas Cookie Baking Thread 2020

And because a photo is worth a thousand words...

Some baked goods of holidays past.

Found one of the pumpkin cheesecakes Greg baked. Woohoo.

Chocolate peanut butter squares. So good for any pb lover. I wonder how this would be with almond butter? Hmmmmmmm. I think that has to go on my honey bake list hahaha.

@missy, I made your (and Greg's) chocolate peanut butter bars many times last year.
They are soooooo delicious. I'm sure they are the reason that my pants got tight!

Not cookies, but I did my first run trying cinnamon rolls from scratch. Only had bread flour lol (forgot again) and DH used all the cinnamon in his festive drinks since Halloween, so I used cardamom (which I find is a super versatile spice).

Rolled too wide:

My kids like to eat breakfast foods on thanksgiving and Christmas morning since we eat around 3.

I usually make a breakfast casserole so I’ll add this to the menu. The cardamom made a nice flavor.

I have used that dough recipe its one of the best I have found!!!! those look yummy
 
Holiday cookie baking done! Next week I plan to make mince pies and a Wisconsin-style Danish kringle.

Holiday browned butter cookies with chocolate chips, cranberries, crystallized ginger and orange zest.

Double peanut butter cookies with honey roasted peanuts, sea salt and Madagascar vanilla.

@missy yummy, I love spritz and make them every year too! My favorite are the ribbon shapes! I had to decorate them BB12C677-18AA-4AE3-AAD2-4324A515ADC7.jpegall by myself this year as we can’t have contact with the grandchildren....

It has begun! These are chocolate mudcake. White chocolate mudcake and red velvet are on tomorrow's agenda. I need to bust out 17 dozen over the next few days, I'm in my happy place!

They are just shop bought fondant with a tiny hint of blue food colouring, and edible cake glitter on the top. Super easy!

Eattable cake glitter !!

I‘m doing these again. 30 more minutes of rise and then I can bake. My 3 twenty somethings are home, so I’ve been feeding them and enjoying them.

i was also thinking of trying my hand at croissants or scones, but I have never baked either before.
 
@whitewave I made some blueberry, lemon scones from scratch a couple of weeks ago, they were not terribly hard (never made them before) and the turned out quite yummy! I have made cinnamon rolls from scratch and they are way harder to make then scones ;)2

Good to know. I’ve been on a scones kick for a while, but I’ve only had them twice during that time lol.

These cinnamon rolls did not come out like last time! I don’t know what I did wrong. They wouldn’t rise (but it’s been storming since about midnight) and they don’t taste right. Lol. The kids said they are ok.

Peanut Butter Bars

Prep Time: 25 Minutes
Ready In: 1 Hour 25 Minutes
Servings: 12

INGREDIENTS:
1 cup butter or margarine, melted
2 cups graham cracker crumbs [9 crackers]
2 cups confectioners' sugar
1 cup peanut butter
1 1/2 cups semisweet chocolate
chips
4 tablespoons peanut butter
DIRECTIONS:
1.In a medium bowl, mix together the butter or margarine, graham cracker crumbs, confectioners' sugar, and 1 cup peanut butter until well blended. Press evenly into the bottom of an ungreased 9x13 inch pan.
2.In a metal bowl over simmering water, or in the microwave, melt the chocolate chips with the peanut butter, stirring occasionally until smooth. Spread over the prepared crust. Refrigerate for at least one hour before cutting into squares.
