Holiday Cookie Recipes

Seven Layer Magic Bars

***one of personal favorites***

Ingredients

1/2 cup butter or margarine
1 1/2 cups of crushed gramcrackers
1 14 ounce can of sweetened condensed milk
1 cup butterscotch chips
1 cup milk chocolate chips
1 1/3 cup flaked coconut (I like it sweetened)
1/2 cup chopped pecans

Directions

Preheat over to 350 degrees (325 for glass)

Line a 13x9 pan with non stick foil (rapid release by Reynolds) making sure to completely cover the sides of the pan

Place the butter in the baking pan, and put pan into over until butter is completely melted

Carefully remove pan from oven and sprinkle gramcracker cumbs over the bottom until completely covered in a single layer

Pour condensed milk over the crumbs evenly

Top with butterscotch chips followed by chocolate chips

Sprinkle with coconut and then sprinkle pecans on top

Press mixture down firmly with a fork

Bake 25 minutes or until lightly browned

Cool or chill (whichever you desire, I place mine on cooling racks for about 1 hour)

Cut into bars, and store covered at room temperature or freezer for longer lasting bars.

Big Soft Ginger Cookies

Yields: 24 servings

"These are just what they say: big, soft, gingerbread cookies. They stay soft, too. My oldest son's favorite."
INGREDIENTS:
2 1/4 cups all-purpose flour
2 teaspoons ground ginger
1 teaspoon baking soda
3/4 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon salt 3/4 cup margarine, softened
1 cup white sugar
1 egg
1 tablespoon water
1/4 cup molasses
2 tablespoons white sugar

DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C). Sift together the flour, ginger, baking soda, cinnamon, cloves, and salt. Set aside.
2. In a large bowl, cream together the margarine and 1 cup sugar until light and fluffy. Beat in the egg, then stir in the water and molasses. Gradually stir the sifted ingredients into the molasses mixture. Shape dough into walnut sized balls, and roll them in the remaining 2 tablespoons of sugar. Place the cookies 2 inches apart onto an ungreased cookie sheet, and flatten slightly.
3. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. Store in an airtight container.

NOTE: I used 1/2 powder ginger and 1 1/2 tablespoon fresh ginger.
When placing the mixture on the pan, scooped them and the smashed then a bit to make them flat when I put them on the pan

Peppermint Fudge

2 c. white sugar

1/2 c. butter (don''t substitute)

5 oz. evaporated milk

7 oz. marshmallow creme

8 oz. white almond bark

1/2 c. finely crushed candy canes (8 regular size)

3 drops red food coloring


Line a 9 in. square pan with foil, spray lightly with Pam.

In med. size pot, combine sugar, butter, and milk. Bring to a boil, stirring constantly. Continue boiling and stirring for five minutes over med. heat. Remove from heat, add creme and almond bark. Stir til smooth (it helps if you just stir a bit, then let sit a minute or so, and finish stirring. helps to melt everything). Add food coloring, mix well. Then stir in crushed candy.

Pour in pan, cool to room temp., then score fudge for easier cutting later. Stored in a tin, this stuff will last forever. Very festive looking!
 
Yippppeeeee, I will have to make the Peppermint fudge for Christmas and I have an Open House at one of the neighbors house on Christmas Eve so I will be bringing that over. hehe Yay, I bet it will be a hit!
