I''m making more cookies this afternoon, and I''ve got fixings for an apple pie and a cherry pie for my sweetheart''s 30th birthday celebration on Sunday. No better way to spend a snow day than in a cozy, yummy smelling house!

I made chocolate chip cookies today (for the second time in a week), and they came out pretty good. I was trying to find a healthier version of the traditional Tollhouse recipe so last week I made a variation sugested by Mara last year. I just finished making a new batch, this time using whole wheat flour instead of regular all-purpose flour. I got the recipe from the Betty Crocker site.

Here''s the recipe from Betty Crocker, with my modifications:

3/4 cup granulated sugar (I used 1/4 c. Splenda)
3/4 cup packed brown sugar (I used 1/4 c. Brown Sugar Splenda)
1 cup butter or margarine, softened
1 teaspoon vanilla
1 egg (I used 2 egg whites)
2 cups Gold Medal® whole wheat flour
1 teaspoon baking soda
1/2 teaspoon salt
1 package (12 ounces) semisweet chocolate chips (I found a whole package to be too many, so I didn''t use the whole bag.)


1. Heat oven to 375ºF.
2. Mix sugars, butter, vanilla and egg in large bowl. Stir in flour, baking soda and salt (dough will be stiff). Stir in chocolate chips. Drop dough by rounded tablespoonfuls about 2 inches apart onto ungreased cookie sheet.
3. Bake 8 to 10 minutes or until light brown (centers will be soft). Cool slightly; remove from cookie sheet. Cool on wire rack.

This recipe doesn''t make as big of a batch as the regular Tollhouse recipe does. The website says it''s supposed to make 3 dozen but I don''t see how that''s possible, even when making small cookies. I ended up making 9 cookies and freezing the rest of the dough to make another small batch later this weekend.

I''ll see if I can dig up the first recipe I used. Be back later!

Thanks so much! You will love the results if you try these, CP. The dough is really easy to work with. I''ve been chilling mine overnight, but only for lack of time to go through the whole process in one sitting. The icing is PERFECT - not too thick, not too runny - and it tasted really yummy with the different flavorings I tried. I liked the lemon best.

We had a bake-off at work today. I didn't participate but my boss sweeped the dessert category with her incredibly simple and amazing shortbread cookies. They weren't fancy looking, but the taste, wow... everything else, as pretty as it was, couldn't beat these! I can't wait to make them! And just THREE ingredients.


Shortbread Cookies


• 1 cup butter (2 sticks) – use real butter, not margarine, it makes a huge difference
• ½ cup granulated sugar, plus more for coating after baking
• 2 ¼ cups sifted flour


1. Cream butter and sugar together.
2. Stir in flour, 1/3 at a time, until well blended.
3. Chill dough for a couple of hours in the refrigerator. (I put mine in the freezer for a few minutes instead, to save time.)
4. Roll out 1/8-¼ inch thick and either use cookie cutters or cut into squares to save time. The chilling is more important to maintain the cookie cutter shapes, so if you want to skip or minimize the chilling just cut them into squares.


Bake at 300 degrees for 12-15 minutes. Watch closely as they will get too brown quickly. You can make them larger and thicker but they may take up to 30 minutes to bake.




Cool for 10 minutes on the cookie sheet. They are very good plain but I dipped both sides in granulated sugar to coat them when taking them off the cookie sheet.




I just made these, figured they were simple, 3 ingredients. I found they didn't have any taste at all (did I miss one of the 3 ingredients? Was I supposed to use icing sugar instead of regular sugar?) I tried to make them more appealing..for the kid's sake. I plopped a hersey candy cane kiss in the center of 12 of them. Nope..still not eating them! They told me to "keep em for Santa" I also made the Philly cream cheese cookies Ellen posted. They had a little more taste. I think I better check out the rest of the thread for recipes with chocolate..maybe that will go over better in my house! lol

I just went into my recipe cards and checked the recipe sumbride posted against my mother's recipe, the recipe she made all her life and I have made all of mine...and they are nearly identical! I think that you are just not used to traditional Scottish shortbread! Your kids may just not like it!!! I loved it all my life and so did my daughter, but she doesn't eat cake or candy!

My recipe is posted somewhere at the very beginning of this thread. I will go look for it, rather than retyping it! The main difference I can see right off is that I use confectioner's sugar, not granulated sugar.

If you find your recipe for a more buttery shortbread, be sure to post it! It took me a few readings to understand that that is what you are really looking for! I would love to have such a recipe so that I can have some more variety available to me when I choose to make shortbread!

In fact, if I can help you to research a recipe, I will be glad to do so. It will be a fun project!

Scottish Shortbread


1/2 lb butter
scant 1/2 cup confectioner's sugar
3 cups flour (My notation says, "use less!" and is heavily underlined; I think you should listen to me. I believe it gets too crumbly with a lot of flour.)



Knead butter and sugar together then work in flour, a little at a time. Form into two small cakes about 1/3 " thick and prick fork right through to the bottom. Bake in a slow oven until light brown. (About 325 degrees F for 20-25 minutes.)




This is the recipe made in my family.
