I see that there are only 46 members on now but hopefully someone who bakes can help me..

I am going to make a Ritz Cracker Pecan Pie for dessert.

Here''s the recipe. It''s very simple but can I put it together a couple of hours before baking it? I worry about recipes with egg whites.

3 egg whites
1 cup sugar
1 teaspoon baking powder
1 cup chopped pecans
14 Ritz crackers (crushed)
1 teaspoon vanilla
Directions
1Beat egg whites until foamy, add sugar and vanilla, beat until stiff.
2Sprinkle baking powder over crackers, mix well.
3Add crushed crackers and pecans to egg white mixture.
4Add vanilla, mix well.
5Batter will be stiff.
6Spread onto well greased 9" x 9"square pan or pyrex dish.
7Bake at 350 degrees for 30 minutes, little less for glass dish.
8Serve warm with vanilla ice cream, if desired.
 
Just put in in the fridge once you have made the crust Mia, it should be fine if you are going to complete the pie and cook it within a couple of hours, thats how I would do it.
 
Ditto! It should be fine if you put it in the fridge until you''re ready to bake it. Sounds delish!!!

I think I might be to late but it is safe if you put it in the fridge but it might come out heavy doing it that way.

I''m not much of a baker, but the fact that you''re using only the whites of the eggs shouldn''t be a problem.

I''m not sure what Karl means about it coming out heavy.

Ha come on over! It is really yummy. I like the ground pecans because I don''t like nuts (thinks it''s a texture thing) but the flavor of pecans is soo good. It''s baking right now. I wanted to make it earlier because I thought I had a lot of time before the turkey was done. But the turkey cooked way quicker than expected (did this last year too, think it''s my oven) so I didn''t have time to make the pie anyway. Anyway thanks for the help, now I know in the future. I am just nervous working with egg whites because when you whip them they change consistency and I am always worried they flatten if left time to sit.

The air bubbles come out and it settles down and becomes heavy rather than fluffy with the air bubbles intact.
Rather like a fluffed pillow will flatten after sitting for a while.
Depending on the consistency of the mix it can be a large issue or a small one.
