I have cashews every morning. I also have roasted almonds (I buy raw and bake them. I like them super crunchy!) with dried cherries most mornings. I love a snack of pistachios, preferably roasted & lightly salted. Macadamias are a favorite, too. I also love roasted & salted peanuts (honey roasted a strong second), roasted sunflower seeds, raw walnuts, raw pecans ... you get the idea. I buy those big-ass bags at Costco, otherwise I go to Trader Joe's. I love nuts!!! :oops2:

DD and I went to Hawaii last year. After a lot of driving to and through Volcanoes NP, we stopped at the Mauna Loa macadamia visitor center, hungry and thirsty. We stayed about an hour, until they closed. We were just eating samples and drinking water, chatting with the lovely workers. At closing, they gathered all their samples and put them in a gallon ziploc bag for us to take with us. :lol-2: Heaven!

I ate a ton of macs in Hawaii last year also. But quality was hit and miss. Some fresh some not so much.

I buy these locally to get my fix:

Roasted and salted pistachios in their shells are my favourite.

In the past few years, I had made roasted nuts and seeds mix to give away as part of my festive goodies bags in December.

The mix had cashew, almond, pecan, hazelnut, peanuts and pumpkin seeds, with the last 2 forming the bulk.

Last December I ordered 13kg of nuts and seeds.

I roasted the nuts and seeds at 180degC, fan assisted, for about 30min, turning half way.

Once cooled, I mixed the nuts and seeds before flavouring them with a slurry mix of Chinese 5-spice powder, toasted sesame seed oil, salt, garlic powder, ground pepper and a touch of Cayenne pepper.

Portion into bags before sealing them using a vacuum sealer.

I shall do the same this year as requests have already been received!

DK :))

i do like hazlenuts in baking but i find them quite hard to chop

what about pine nuts ??
yum yum yum yum yum
now they are my real favorite
in more shell we say finacially stable times i would eat $20 worth just walking home from the supermarket
now i keep a small bag in the freezer just for chicken salad or this one stuffed chicken breast i do

I 100% thought this was a Best in Show reference lolll

"I used to be able to name every nut that there was. And it used to drive my mother crazy, because she used to say, 'Harlan Pepper, if you don't stop naming nuts,' and the joke was that we lived in Pine Nut, and I think that's what put it in my mind at that point. So she would hear me in the other room, and she'd just start yelling. I'd say, 'Peanut. Hazelnut. Cashew nut. Macadamia nut.' That was the one that would send her into going crazy. She'd say, 'Would you stop naming nuts!' And Hubert used to be able to make the sound, he couldn't talk, but he'd go 'rrrawr rrawr' and that sounded like Macadamia nut. Pine nut, which is a nut, but it's also the name of a town. Pistachio nut. Red pistachio nut. Natural, all natural white pistachio nut."

I love pine nuts, but no longer use them for pesto due to the high cost. In fact I don't buy them at all.

Cool secret! I never thought of putting pesto in chicken soup!
As previously mentioned, my sister uses pistachio's in her pesto, but I can see using cashews. Versatile nuts!

I would rough grind them using my Bamix.

I love pine nuts-- or pignoli as we called them in our home. I like to sprinkle them on pasta along with an olive oil/butter mixture, plus fresh garlic, grated Parmigiano Reggiano and Pecorino Romano. The price is really high now but I buy them at BJ's.

When I was a kid my grandmother brought a few of the pignoli pine cones home when she returned from one of her trips back to Italy. /they are large! My brother and I used a hammer to crack the pine cones open on our back step, to find the nuts within.

It never occurred to me to put them in chicken salad-- now I have to try that.

HI:

Found some shelled pistachios today--on sale! At Shoppers Drug Mart. I have to STOP eating them all!

cheers--Sharon

I love pine nuts. I should have mentioned them. I put them in my salads, along with feta cheese and some chopped Kalamata olives, then a nice vinaigrette.
