Who cooks Indian food?

I would highly recommend the Dishoom's cookbook and its Chicken Ruby, Lamb Raan, and other dishes.

Instapot is your friend! For all your lentil cooking and more.
You seem to have all the basics, add ghee to your collection. You can also make it at home.
Flavor enhancers: try grinding/food chopper a large mix of raw garlic, ginger, green chili( the little green ones- spicy ). Once its all chopped up, put into ice cube trays and freeze. This will last you months and you can just add the mix into any recipe, so much of a time saver. I also do the same with tomatoes.
Onions and lemons are also great food flavorings and in fact you will see a lot of recipes call for onions sautéed . OOHH- soak your lentils the night before or the morning of cooking.

I've used Madhur Jaffrey's books. I find the recipes in them tend to come out well.
She learned to cook by correspondence, having gone to the UK to be an actor and missing home, from her mother's letters. So she's pretty good at describing and giving instructions.

I find it fascinating how Madhur Jaffrey learned to cook through correspondence, especially while pursuing her acting career in the UK. Her mother's letters must have been a treasure trove of culinary wisdom. Her ability to describe and instruct is probably why her recipes work so well – it's like having a personal mentor in the kitchen.And, hey, when those Indian food cravings hit (or any cravings, really), I'm all about the irish breakfast near me search.
