2 great caterers, how to choose?

We are currently at the caterer stage of the wedding. Between those that are approved by the venue, serve what we want and have good reviews, we are left with two really good choices and I need help figuring out how to decide.

Three tomatos: My mom's best friend who has wonderful taste and regularly deals with caterers highly reccomends them. They are well established and have been in business for over 30 years. They also have exclusive contracts with a number of local landmarks.

Haute Touch: New to the area. I have met the owner/chef and really liked him and have tried their food, which is very good. He was also one of four chefs chosen to do the last presidential inauguration.

So the food is great, the prices are the same and they are both highly respected. How do I choose? What questions should I ask? Besides the obvious, what should I be thinking about when picking a caterer? For those of you who are married, were there things you loved about your caterer, hated, wished you had known going in?

Honestly I don't know if both food is great and the same price...I know one of the things I really liked about my wedding was the service. They had so much staff so the clearing and serving went very fast. Actually every time I got up during the meal (to talk to someone or take a picture) they covered my meal for me to keep it hot. I thought that was a nice touch. Maybe if one has more experience with the venue that would also be helpful. Is one presentation nicer over the other's?
