Destination Wedding - Symbolic Ceremony?

We are getting married in Mexico, but have decided to legally marry here at home, and then just have a symbolic wedding ceremony in Mexico (due to all the paperwork, medical stuff, etc etc). The thing is though, that the wedding coordinator informed us that it will be a minister that will be marrying us, not a justice of peace or something like that (since it is non-legal). Neither of us are religious, so I don''t know how this will all go. We would like to keep it as non-religious as possible. Has anyone done this before? If so, how was the experience? I think this is quite common in the symbolic or renewal of vows ceremony, but I would love to hear anyone''s experience.

Depending on where you are getting married ie a church, the beach, etc most places will let you pick your officient. As it is non official, anyone can do, including family and friends. If they say it has to be a minister, look online. I think it is the unitarians where just about anyone can be certified with them to marry people. My brother got bored one night and did it.
