AFAIK, and I could be wrong as I am not an expert, doublets are made by gluing the top layer of Opal with a bottom layer made out of materials such as Agate.
It is inadvisable to submerge/expose a doublet in water for a long time for the glue to soak up water and deteriorate.
As for custom setting, it depends more on the depth of the doublet whether it can fit into a pre-existing setting that has prongs or claws.

The doublet is not very deep, however, I doubt if you would be able to find a pear shaped pre-made setting to fit, IMHO.
