this might sound nuts, but my favorite dessert is a Butternut Squash Curry Chocolate Chip quick bread....

it
is
amazing!

and super easy to make!

You have peeked my interest. I'm off to google that one. i like butternut squash, love curry and chocolate chip's on anything has to be good right?

Here is the recipe.
I revised one awhile back, I use it all the time!!!
**Ingredients**
1 small butternut squash (or 1 cup puree...I used frozen for this cause I was to lazy)
2 cups whole-wheat pastry flour
1 teaspoon ground allspice
1 teaspoon ground cinnamon
1 teaspoon freshly ground nutmeg
2 teaspoon curry powder
1 teaspoon baking powder
3/4 teaspoon salt
1/2 teaspoon baking soda
1/4 teaspoon freshly ground black pepper (Yes you heard right)
1/2 cup unsalted butter, at room temperature
1 1/2 cups packed light brown sugar
2 large eggs (room temperature)
1 teaspoon vanilla
*optinal* 4 oz chocolate chips
Powdered sugar or whipped cream (optional)

**Preparation**
1. Preheat oven to 350°. Cut squash in half lengthwise and remove seeds. Place the squash halves, cut side up, on a baking pan, then cover with foil and bake until tender when pierced with a fork, 20 to 30 minutes. Uncover and let sit until cool enough to handle, then use a spoon to scoop out the cooked squash from the peel. Mash with a fork. Measure out 1 cup of the squash and set aside any remaining for future use (see Notes). You can skip all of this if you get frozen puree, which is LOADS easier..up to you

2. Turn oven down to 325°. Butter an 8- by 8-in. baking pan and set aside.

3. In a small bowl, combine flour, allspice, curry powder, cinnamon, nutmeg, baking powder, salt, baking soda, and pepper. Set aside.

4. With a mixer, cream together butter and brown sugar in a large bowl until smooth and a bit fluffy. Add eggs one at a time, beating for 30 seconds after each addition. Mix in vanilla.

5. Add half of the flour mixture to the butter mixture and stir to combine. Stir in the cup of mashed squash. Add remaining flour mixture and stir just enough to combine. Gently fold in chocolate chips. Pour batter into prepared baking pan and bake until a toothpick inserted in the center comes out clean, 50 to 60 minutes. Serve plain or with a dusting of powdered sugar or a dollop of whipped cream.

I make oatmeal cookies, but instead of raisins I use dried apricots and add walnuts, some applesauce and flaxseed meal. I then freeze them and pull one or two out occasionally to satify my sweet tooth.

If only I would only pull out one. I mean I would, I promise, one at a time. And I would be in the kitchen all night defrosting them - one at a time...

I should warn you about our mean watch dog. He would be all over you as soon as you open that freezer. Licking your face of course.

Anyway, cookies are well hidden from my DH who would eat the whole stash at one sitting.

Darn it. Now I want a cookie!

YT, I've never tried it but there are vegan jello options. You could also make it from scratch using something like agar.

I've been trying to stick (mostly) to fresh fruit and maybe adding a very light chocolate drizzle.

Oooooooo! I made a cheesecake one time but used fresh squeezed key lime juice and fresh key lime zest. Turned out as this amazingly thick NY cheesecake key lime pie sort of thing. So good! (never made it again because testing & juicing 3 bags full of itty bitty key limes was MISERABLE)

Favorite dessert indulgences:

Flourless chocolate cake (whole foods makes an amazing one)
Chocolate lava cake (especially with cinnamon or orange Curacao)
Cheesecake of any variety
Brownies
Poached pears
Gelato
Apple crisp (and variations using rhubarb or cherries or mixed berries)
Chocolate mousse
S'mores (including white chocolate, dark chocolate, caramels, toffee bits, etc in some yummy combination)

Hmmm... I can't really think of a dessert I don't like

Ohhhh, TP, why'd you have to say gelato???

Our Kroger sells a gelato by Talenti called Sea Salt Caramel. Omg, it's so good.

I've had that... it is AMAZING!! :naughty:

I made a beautiful brown rice pudding with skim milk the other night. It doesn't negate the white sugar and raisins, but it was relatively "healthy" for a dessert.

I never thought of the dried apricots, that sounds like a good addition/substitute--will have to try.

Loving Biscoff straight out of the jar!

At the moment, Pioneer Woman's chocolate cake is a fave. So so so good!

I know it well!

They also have a double dark chocolate and a fudge brownie that are amazing. I've also enjoyed espresso with chocolate, Apple pie, Tahitian vanilla bean, Mediterranean mint, raspberry cream, black cherry....

I love doing half sea salt caramel and half fudge brownie with some fresh berries...

Oh-- and Tahitian vanilla bean with caramalized bananas in rum :lickout:

IMO nothing tops Crème brûlée.

That's my favorite too. Target actually sells some in their frozen section that's not half bad. My other favorite is Tres Leche cake. I use the Pioneer Woman's recipe.

Lately for desserts from restaurants I've been on a lemon kick. I think it started on our first wedding anniversary (almost two years ago  ) when DH and I split the most deliciously citrusy lemon chiffon cake with strawberry-rhubarb sorbet and rhubarb coulis after our dinner at Back Bay Grill in Portland, Maine.

Otherwise...my weakness is ice cream/gelato, all the way. Personal favorites are Jeni's (ice cream...particularly the Loveless Biscuits+Peach Jam and Buttermint...not at the same time, clearly) when I'm in Ohio and Zingerman's (gelato) here at home. I've been really into affogatos and just got one this weekend with Claritek that was a teensy scoop of Zingerman's dark chocolate gelato with a shot of their amazing espresso poured over. Such an amazing little dessert! :lickout:

I am soooo with you on gelato/ice cream/sorbet! My kids eat ice cream all the time and I can generally withstand the impulse, but if there is fruit sorbet in the house, I'm a goner. Might as well mainline it right on up there, because I will eat the whole thing!

I'm not sure if this fits but...

For a Diet Friendly snack, I would suggest Quest Bars.

~180 calories
Majority is Fibre and Protein.

The Chocolate Chip Cookie Dough, Double Chocolate, and Cookies and Cream are all amazing.

I was recently on a diet and they were allowed. Now that I'm off, I still eat them cause they are that good.

ETA- I assume milk is ok for you.

Yes! I eat Luna bars (similar to Quest but slightly different supplements added for women) for breakfast several times a week! Maybe I should start eating them for dessert instead!

A Chocolate Chip cookie Dough Quest Bar and a Low Fat Vanilla Greek Yogurt was my "dessert" on many a sweet craving night.

Most protein bars taste like aspertame flavoured cardboard. Quest is the real deal. Victory Bars are similar and good, but not as good as quest IMO.
