And then he decided he didn''t want to have dinner at home! We ended up having it the next day as leftovers, but it was definitely not as good.

I actually roasted it like the Zuni Cafe recipe, and the bread salad was delicious! But I kept it lemony by sliding lemon slices under the skin along with thyme sprigs.

And it is totally perfect for cold weather, as that oven is going to be going at 450 for about an hour.

OMG I LOOOOVE Zuni chicken!!! My dad has been making it for years... I made it for my BF''s family when they were visiting bc my BF''s dad always orders chicken at restaurants. It was a big hit. I need to get my butt down to Market St and finally try the real thing...
