miracle -- hit reply, then quote.

Everything sounds so good.

I don't have anything really picked out yet as we haven't had our tasting. But we are doing sit down. And there will be one vegetarian option offered and two meats (a beef and a fish, most likely). Or just a duet and vegetarian, I have no idea yet.

I REALLY REALLY HOPE THE FOOD IS DECENT! Here's the full options menu from our venue.

Yeah Courtney - I think I''m more excited about the Banana''s FOster Station than anything - when our caterer told us that he could do that for us, FI''s face lit up like a christmas tree - I just couldn''t say no! ha!

Wow Gypsy! You sure do have lots to choose from!!!!

We are having a sit-down meal. We're having a very small wedding.

To be served with wine during a "cocktail hour" (we're doing wine only--a red pour and a white pour)

Hot Crab and Lobster Dip Served with Pita Chips and Crackers
Creamy Pamlico Crab and Lobster with Dijon Mustard, White Wine, and Spices

Bruschetta Caprese
Roma Tomatoes, Fresh Mozzarella, Roasted Garlic, Basil, Extra Virgin Olive Oil

First course:

Guests choice of

Traditional Caesar Salad
Romaine Hearts, Garlic Croutons, Parmesan, Housemade Dressing

Creamy Tomato Soup
Basil, Garlic, and a touch of Spice

Main Course:
Guests choice of

Broiled Wild Alaskan Salmon Filet
Topped with Cucumber, Tomato, and Spanish Herb Salsa

Chili Grilled Shrimp Skewers
Pineapple, Chorizo, Roasted Garlic
Cilantro Butter

Pan Seared All Natural Ashley Farm’s Chicken Breast
Pesto Cream Sauce with Fresh Basil and Parmesan

ETA: Most of our guests are family, and we are seafood lovers, so that's why 2 options are seafood. The chicken is there for my sister-in-law and a couple of others who are not seafood people.

ETA: We are also having a champagne toast, but we are saving a bit of money by going with a nice Prosecco instead of champagne. The name is Anime Pink. The venue gave me a bottle to try at New Years, and I thought the color was beautiful and festive, and it was delicious.

Our venue is providing coffee service, and of course there will be wedding cake! That's it for dessert.

DITTO! DITTO! I am not a dessert person. I'm one of those weird people who does not like chocolate and who can just walk right by sweets. BUT, ten years ago, I was on my first trip to New Orleans with a former BF. He got reservations at Brennan's and we got that for dessert. Oh. My. God. I could have died right there. The banannas are flambe'd (set on fire) and it carmelizes the sugar and the banannas and burns off the alcohol in the booze and the whole thing is just......it's better than sex. Now, I don't like ice cream all that much, either, but poured over vanilla ice cream....Mmmmmmmmmm!

And to this day, it's my favorite. I've made it at home a bunch of times, but it's never as perfect as Brennan's. I swear - if I was on Death Row, that would be my last meal. In massive quantities.

Thanks for sharing everyone!

Man, the bananas foster station sounds like a fantastic idea that no one will ever forget.

I want to do a cocktail-style reception but with substantial food, not just a bunch of appetizers....so I need lots of ideas!

Bee* -- thanks for posting that link. Going to check it out now.

As guests arrive for the cermony there will be waiters passing glasses of sparkling water, lemonade and iced tea around.

During cocktail hour, we''re having the following:
-Display of Imported and Domestic Cheese and Fruit (w/ artisan breads and gourmet crackers)
-Antipasto Display (imported sausages, cured meats, assorted pates/foi gras, game terrines, vegetables, olives & fresh breads and crackers)
-Six passed hors d''oeuvres (to be decided still)

This is followed by the Champagne Toast

During dinner we will have:
-Appetizer (to be decided still)
-Entree- guests will choose one of the following:
-Pan roased Murray''s statler chicken breast; stuffed with "ratatouille style" vegetables, Vermont cheddar mashed potato, Cabernet demi-glace.
-Grilled Hereford beef tenderloin; friend onions, Yukon mashed potatoes, shiitake mushrooms-sweet pepper salad, Beaujolais demi-glace.
-Summer vegetable lasagna; fresh pasta sheets, local vegetables, sheep’s cheese, tomato sauce.
-Coffee/Espresso and wedding cake

There will be open bar for 4 hours.

Mmmm Gypsy I''ll have the hoisin pork loin.

Seriously though, that is so much to choose from!!! I''d be lost!

We''re having three options (sit down):

1. chicken with a lemon and herb sauce
2. lobster stuffed haddock with newburgh sauce
3. prime rib

Rolls and butter and a cesar salad to start.

Afterwards, they''ll bring out chocolate covered strawberried as an appetizer, of sorts, to our dessert buffet.

Coffee and tea

Yeah I KNOW! It''s a limited tasting though, so it''s chef''s choice of entrees. There are a lot of things that sound good on the list... but I need to see what they taste like IRL.

Only thing I KNOW for sure we are having is the Gold alcohol package (plus a case of champagne) and the salad: "Heirloom Tomato Caprice - fresh mozzarella, basil, & tomatoes with olive oil & crostini" and the cocktail hour displays:

Antipasto – provolone, ham, brie, roasted garlic, olives, pepperoncini, tomato & crostini…$5
Cheese Board – a selection of cheeses from around the world with grapes, & crackers…

We are warring over appetizers: I want the scallops, he hates scallops. I don''t think anyone will other than us will eat carpacio or quail, which leaves us with crab cakes, and I am very picky crab cakes (too much STUFF not enough crab at most places).

Entrees are completely up in the air. At least we have a cake agreed too!
2.gif

all of the following will be available during cocktail hour:
Appetizers
Sausage Stuffed Mushrooms in Alfredo Sauce

Spinach and Artichoke Dip Bread Bowl
With Pumpernickel and Rye Cocktail Breads

Bruschetta
Topped with a Balsamic Marinated Medley of Fresh Basil, Soft Fresh Mozzarella and Diced Roma Tomatoes

Olive and Cheese Medley

Fresh Berry Assortment

Homemade Semolina Bread with Dipping Oils and Spices

then...

Plated Salad, aka our subtle way to say "QUIT GRAZING AND SIT DOWN ALREADY!"
9.gif

Mixed Greens, Black Olives, Diced Roma Tomatoes, Thinly Sliced Red Onions and White Balsamic Vinaigrette with Parmesan Cheese

everything else will be served buffet/station style:
Pasta Station
Chicken Tortellini Carbonara

Spinach and Garlic Stuffed Ravioli in a Tomato Cream Sauce

Sautéed Shrimp and Scallops Tossed with Penne Pasta and Tarragon Butter

Side Items

Grilled Mixed Vegetables

Refreshing Marinated Antipasti Style Vegetables

Splenda Sweetened Tea, Unsweetened Tea, White Sangria, Water

we have several diabetics, a few jewish people, and some vegetarians, so we''ve tried to cover everything. the groom''s cake will also be sugar-free, so they get dessert, too. dang, now i''m hungry!

sandia_rose oh, you just haaaaad to post a picture! that''s cruel and unusual punishment; i almost licked my computer screen!

Gosh, I just LOVED our wedding food. The catering company did a fantastic job (and they were SO friendly!)

Let''s see we had a lovely cocktail hour and plated dinner:

Passed hors d''oeuvres

Pecan chicken salad in little fancy pie crust things (sorry, I don''t know the fancy names) (We chose these with my mom in mind)
Smoked Salmon on little toast things (we selected these with my dad in mind)
Baked brie and shitake mushroom wraps

Salads

Greens with cranberries, pecans, shredded cheese, and vinegarette dressing

Main dish. The guests chose from:

Filet of Beef in a red wine reduction with twice baked mashed potatoes and asparagus
Pecan encrusted chicken with twice baked mashed potatoes and asparagus
Crispy Salmon in a lemon creme sauce with mushrooms and sweet potatoes and asparagus

and Chicken tenders and twice baked mashed potatoes for the kids (and a few kid-at-heart adults)

Of course we gave a few guests green beans instead of asparagus b/c the preferred it that way.

The caterers prepared DH and me a plater of all 3 entrees to share. That was a nice touch.

Desert:

500 passed chocolate dipped strawberries (one of my very favorite treats! I almost could have done without cake altogether)

Wedding Cake (Alternating layers of white cake with pastry creme and white with strawberry paster cream)

Grooms Cake (Chocolate with butter cream chocolate frosting and filling and belgium chocolate mosaic pieces)

Here is the menu that the restaurant just emailed us... I wish I was eating it now
