Yet another question, Visiting caterer

Ok so I have yet another question. Sorry about the constent bombardment of questions!

But My mom and sister are meeting with the first caterer and possibly only caterer. I can not attend since I live in Florida and they are in Minnesota.

What should they ask??? I have no idea what to do when meeting with caterers????

Will you be able to do a tasting?
What extra fees are there for service, cleanup, etc?
Does she make enough food for only the number of guests you give her or does she make extra as a sort of "buffer" to be sure you do not run out?
This may be covered in your facility rental, but are you able to bring in your own alcohol or does the caterer provide it?
If you can bring your own, do they charge a corking fee or anything like that?
How does the staff dress?- you want to make sure they look professional
If you are feeding vendors (photographer, etc), must they eat the same meal as your guests or will the caterer provide a less expensive meal like sandwhiches or something?
What age children must you pay for?
