Finally found a great caterer who specializes in veggie options. Our wedding will be all vegetarian (this is not up for negotiation...we would not serve meat to guests in our home, so why would we at this very important meal?) and below is a list of entree options.

Let me know what you think, meat-eaters! I believe we get 2 options.

Can they do a nice pasta? everything except the top three I picked sound like side dishes to me or TOO vegetarian (the tofu or the pot pie). A nice tortellini or canaanoli, or ravioli?

I'm an omnivore who loves meat dishes, but I also love vegetarian dishes too. I should get my FI's opinion on this, because he's an omnivore who is more of a carnivore. Haha.

My opinions below:

Crepes Stuffed w/ Asparagus and Fontina in a Beurre Blanc Sauce-In my experience, there are a lot of asparagus haters. Personally, I would love this and so would FI.
Winter Vegetable Pie-Yes! from me
Potato, Fennel and Leek Gratin-Eh for me, but FI would yes yes yes this one
Spicy Corn Cakes w/ Smoked Cheese and Chilies-Eh
Enchiladas Verdes w/ Spinach and Tomatillo Sauce-Eh

Grilled Tofu in a Ginger Marinade over Basmati Rice-Meat lovers tend to turn their noses up at anything "tofu" related. FI says no to this dish. But actually this is what I would choose for myself if I were given all these choices. And I *think* FI would end up liking it too. Unfortunately, even though I love the idea of this dish, I think you're better off going with something eggplant or potato because they're so often used in "meaty" dishes that I think omnivores would find them most appealing.

These are the ones that off hand sound great to me. The Fusilli is my first choice, but I was concerned about nut allergies.
 
We did this too!! We''re both veggie so it just made sense to us. My dad questioned our choice so he got left out of the process. No one asked us at all the day of our wedding and my dad had even forgotten that everything would be veggie.

I''m a dedicated meat eater and as such none of the first grouping sound even remotely appetizing. Therefore, I''d have to go with the pasta which I love. On the list there are only three that I would touch. I''m not even a picky eater. I guess I just don''t have refined culinary tastes-LOL. Just being honest. I''m sure your guests will love whatever they serve. Will people know ahead of time what the choices will be?? If so, some might elect to fill up before hand. We''ve done that before if we know the food will be not to our taste.

i actually wouldn''t have even caught on to the lack of meat...until "tofu" appeared on the list. i used to be semi-vegetarian, so only poultry and seafood, but i kinda missed my cow carcass (i use the gross terminology because i realize how awful it is for you...and the cow...but it''s just so yummy! aaand i digress! ANYWAY!). i''m thinking if you didn''t make it a point to tell people they''re eating tofu, they''d likely go, "mmm, looks good" and never be the wiser, but if you advertise that you''re serving tofu to a crowd of carnivores...well, you''ll be having leftovers. tofu and soy are both stigmatized. it''s discrimination!!!

I think anything you pick will be great but i second (or third or fourth haha) whatever was said about tofu. I''m a vegetarian, so of course they all sound good to me. But for some reason, people get really scared of tofu. Such a shame, it''s a fantastic thing! :-) I applaud you for standing your ground. We''re having stuffed portabellos (mozzarella, roasted red peppers, red onions, zuchhini) in a sweet bbq sauce and we''re having a special type of eggplant parm. We are having a chicken dish only because i don''t have to touch it and my family is from the deep south. they''ll seriously wonder where the "food" is

Personally, I don''t like eggplant, but I have heard it''s "meaty" and a really good, satisfying substitute. Omnivores do order eggplant at restaurants without their arm being twisted.

Grilled Polenta on a Spicy Smoked Tomato Sauce Sounds yummy but not sure how appetizing "cornmeal mush" would be to most.

Crepes Stuffed w/ Asparagus and Fontina in a Beurre Blanc Sauce This sounds YUMMY!

Winter Vegetable Pie Probably nice but wouldn''t be my first choice.

Potato, Fennel and Leek Gratin IDK... never had anything like it but might be a nice choice.

Spicy Corn Cakes w/ Smoked Cheese and Chilies This sounds really delicious!

Enchiladas Verdes w/ Spinach and Tomatillo Sauce This sounds really good, too. I LOVE tomatillo sauce! Even though many may not be a spinach fan, usually when it''s in something most are ok with it.

Eggplant Filled w/ Mushrooms, Sun-Dried Tomatoes, Ricotta and Pine Nuts This sounds very good and I don''t even like eggplant; I think I would eat it (though I don''t like mushrooms either, but I''m in the minority there).

Zucchini filled w/ Corn, Chilies and Smoked Cheese

Roasted Peppers filled w/ Eggplant, Summer Squash and Basil

Grilled Tofu in a Ginger Marinade over Basmati Rice Definitely not a fave; I think most omnivores are repulsed by the sound of "bean curd" even though this entree sounds like it would be yummy (and I am not a Tofu fan).




I like the first group of choices better just because they sound very different. Most of the pastas sound "common" so I would rule them out for that reason...

Pasta is "safe."

I'm very, very picky, too. I don't eat eggplant or mushrooms or Tofu or mushy things or or or...

I just kind of liked the idea of something a bit different without being sooo out-there-different like Tofu is to most meat-eaters. Though I don't eat eggplant, I would try it in one of those entrees (maybe I wouldn't actually eat it, but I would try it).

ETA: Actually because I am so picky, I usually wouldn't go to an event hungry and expecting food I'm crazy about- perhaps your friends and family won't expect a big, juicy slab of cow. If they ask I would tell them it will be veggie but wouldn't say exactly what it is- then if they can expect to try something maybe a little different or can assume they won't like it, they can eat something prior.
 
I think it''s great that you''re sticking to your guns and serving all veggie options. personally i don''t think that i''m a picky eater, but i have to say that none of those sound all that appetizing

. i think it is your meal and you should serve what you want ad have no qualms about it, but if you are looking for a crowdpleaser for those that aren''t super into the veggie dishes, i would say definitely serve one of the pasta options.

i think that these are the most user friendly, particularly the penne dish and a veggie/cheese lasagna.

I am not a deticated meat eater and vary rarely eat meat, but I have to say I can''t find anything edible in the first set. A lot of the pastas sound good though and I would be more than happy with them. Another thing I noticed was that there were a lot of spicy dishes which people may not be able to eat, especially older folks.
Consider a mainly mushroom or potato dish. They are easy to eat, don''t scream vegitarian, don''t have strong flavors like asperagus, and even carnivores often have them as sides with their meals.

I don''t eat tofa nor does anyone in my family, but there are good reasons. For my mother and I, the tyromine causes migraines. For my borther and uncle who are prone to anemia, soy protien prevents the body from abosrbing iron, worsening the condition. So just be aware you may want to have a non tofu option.
 
I will chime in the the tofu thing. I personally LOVE tofu. As long as it''s not deep fried (really don''t see the point of this..ick) and is in a yummy sauce or soup. Whole foods has a kung pao tofu TDF, that I REALLY enjoy getting. However, I was introduced to tofy by my MOH who is a vegetarian, and was skeptical of it when I was first asked.

IF I were ordering off a menu, and the menu had only the choices you list in this thread, the tofu would ACTUALLY probably be my first choice. FOR ME. But I wouldn''t order it for a bunch of omnivores.

LOL Gypsy, the only time I like tofu is when it IS deep fried and cut into small pieces. Haha.
 
Do you think a buffet would be better if we are serving the same thing? Example of what would be included in our package:

4-5 appetizers (served at cocktail hour)
2 entree choices
1 Pasta
1 salad (or soup)
2 vegetables/sides
bread/butter
coffee service

Originally we were planning on doing plated dinner (we heard it is easier when you have over 100 people, they won''t be queueing up in line) but maybe it is better to offer a buffet? That way people could just fill up their plates with vegetables/sides or pasta if they aren''t enthusiastic about the entrees? Or could they do this anyway if it is plated? Difference in price is minimal (pay for 2 extra servers)

Also, the wedding is in southern california, so I don''t think anyone will be too freaked out by the presence of tofu. And, if it is an option they can just choose the other one. But I am not married to the idea of tofu either.

As a vegetarian, I usually end up eating all of the veggie friendly stuff at the start of the meal (bread, soup/salad, appetizer) so that I am reasonably full when the actual entree comes (invariably some interpretation of a pile of grilled vegetables).
 
You know, I was thinking, can you talk them into three options?

Then you could do the cheese lasagna which is SUPER safe as most folks will eat it. But also deathly boring.

Then something with ''chancy'' veggies (like eggplant, mushrooms, or asparagus, or spinach).

And then another option with another ''chancy'' veggie.


I ADORE veggies, and except for turnips and parsnips, will eat every veggie you can think of. But most people I know are fussy about either mushrooms, or spinach, or eggplant. Strange to me, but true.

I think that in this case a buffet would be A LOT easier. It will let people try a little bit of things PLUS you get two entrees AND a pasta. Which is a great deal to me, as you can do the cheese lasagna as a safe choice for the pasta, and get more creative with the other two.

Ditto. I like the idea of a safe pasta choice then something a little less common and more daring.

Would it be possible to do it as stations to split up the line?

I''ve been in So. Cal. all my life and I just can''t get into Tofu... most people I know don''t eat it. We wouldn''t be freaked out by it and some may try it, but with other choices there would be something else for them whether they tried it and didn''t like it or just didn''t try it.
 
My FI honestly won''t eat any veggies other than lettuce (and maybe a little onion) in salad. (Making side dishes for dinner is NO fun for me!) He would only eat the pasta dishes, namely the lasagna, penne, or primavera. I think a buffet is a great idea, that way people who only might light one or two things can fill up on that, and others can pick and choose and try new things, and still get something else if they end up not liking it! Personally, I would LOVE to try almost ALL of your options, but would be afraid to choose one as an entree in case I didn''t like it, so would end up picking something safer.

Speaking from experience here, as we had a veggie wedding. Some people will only eat meat based dishes no matter HOW delicious the food is (we had our wedding at one of the best veggie restaurants in the country and still 2 people didn't eat the main dish at all-my uncle and cousin who are MAJOR meat eaters). So really, there is nothing you can do about that.

BUT I will say that the majority of our guests opted for the non-tofu/tempeh dish at our wedding, and ALL who actually ate the food LOVED it even if they were apprehensive at first. So def. offer at least one thing that isn't tofu and it appears that you will. I second the idea of either the buffet, or making sure that one of the options is a plain-ish pasta dish. But even then some people just are scared of veggie food. Just don't let it bother you.

As for the first list of options I think many of them are too fancy sounding for certain people, and also none of them sound particularly like entrees as someone mentioned above. But I think they sound great, and just add in a pasta and you are good to go.
 
I think the buffet is a great idea. That way people can sample everything and bulk up on what they like best. If you have a cheese lasagna it should cover even people like my husband- he won''t eat veggie lasagna. Remember alot of people don''t like eggplant, mushrooms or asparagus (I personnally love the last two, won''t go near the first). I feel for you- makes me glad my wedding planning days are way behind me-LOL.

I like the buffet idea also... some people may not be very open to the vegetarian idea but this way you could allow them to choose what looks best. I''m not very picky so I can eat almost anything without complaint so these are my opinions:

Eggplant Lined Soufflé w/ Millet and Veggies topped w/ a Basil Aioli - Not so much...
Grilled Polenta on a Spicy Smoked Tomato Sauce - Sounds great to me!!
Crepes Stuffed w/ Asparagus and Fontina in a Beurre Blanc Sauce - this sounds amazing except for the asparagus part
Winter Vegetable Pie - I wouldn''t eat it
Potato, Fennel and Leek Gratin
Spicy Corn Cakes w/ Smoked Cheese and Chilies- Sounds really good!
Enchiladas Verdes w/ Spinach and Tomatillo Sauce - Sounds equally as good!
Eggplant Filled w/ Mushrooms, Sun-Dried Tomatoes, Ricotta and Pine Nuts
Zucchini filled w/ Corn, Chilies and Smoked Cheese -
Roasted Peppers filled w/ Eggplant, Summer Squash and Basil
Grilled Tofu in a Ginger Marinade over Basmati Rice - please no... I don''t mind tofu in small quantities but the smell, taste, and texture get to me if its a main part of a dish
Pasta Primavera in a light Pesto and Orange Reduction Sauce
Penne with Fresh Tomatoes, Basil and Garlic
Lasagnas with Meat, Veggies or Cheese - I love veggie lasagna!
Portobella stuffed Ravioli with a Butter Sage Sauce - Yes, please!
Fusilli w/ Toasted Walnuts and a Gorgonzola Sauce
Linguine w/ Tri Colored Peppers in a Sundried Tomato, Fennel Cream Sauce
Udon or Soba noodles in a sweet Soy-Ginger-Peanut Sauce
Linguine w/ Shitake Mushrooms, Red Onion, Capers and Olives

If people are gonna be sketchy on the choices, buffet sounds like a great option. That way as a guest, you''re not ''stuck'' if you don''t like the entree you picked.
 
As a tofu-loving omnivore, I''d eat most of anything out there. So I''m probably no help to you. The ones that jumped out at me as something I''d pick (if that were the menu at a restaurant) are the mushroom ravioli, the fusili with walnuts, and the enchiladas. I think if you decide not to do buffet, you should definitely pick a pasta dish...pasta without meat seems less "vegetarian-y" than just vegetables.

Another veggie dish I love is any sort of pasta combined with squash or pumpkin. My favorite!
