Ok so a few weeks ago someone was kind enough to post a delicious looking lemon pie recipe! Well I bought the ingredients finally and juiced the lemons tonight. I will finish the pie tomorrow! So I thought I would just tease you all with a little "eye candy" this evening! Hehehe Here is the hard labor of juicing 6 lemons by hand. Before the juice was triple strained.....

Hopefully tomorrow I will have the finished product to show you all!

Mara and Deco, and can''t remember who else will surely get a kick out of this!!! I''m betting that someone will ask you to make and photograph your kiwi pie-making skills sooner or later, ha ha!

Haha!! Too funny. I was away when all the Lemon pie references were made. Came back from vacation and was like HUH?? Anyway, I loved learning the meaning behind it and yes MS Deco does prefer Kiwi pie. Me I love''em all.

Thanks monarch! Yea I got the silly idea one day when Mara told me to make lemonade outta my lemons and I just about fell out of my chair. What? Make lemonade? Sacreligious! So I think it was Blueroses but could be totally wrong, I should go back and check, thatr posted a good looking recipe after I asked. I had Key Lime at a restaurant for my grad. ceremony and thought, I really gotta make that lemon pie! I can''t wait! My mom has the best pastry crust in the world which I will use for this baby! As for merigue, I think I''ll be going with whipped topping from heavy cream and confectioner''s sugar. When I was younger I was never a meringue fan. Perhaps the next pie

Oh and if you want a good mental image - I had to get creative to strain the juice! First I used a small holed cheese grater, and then a tea ball. It was all I had. Wow I am laughing at myself asking should I really be posting that info. Pretty soon I will be the PS dork!

4 whole eggs
1 1/2 cups sugar
1 cup fresh lemon juice
1 cup heavy cream
2 pre-baked piecrusts
Preheat the oven to 350 degrees F.
Whisk the eggs, sugar, lemon juice and heavy cream together in a bowl. Strain and skim any foam.

Pour into prebaked pie shells, and bake for about 15 to 20 minutes, or until the filling just sets, and center jiggles. Cool completely.

CONFESSION: last weekend I was at this little farm stand/deli type place that sells mini indivdual pies. Like 3 inches across but still look like "real pies". Guess what I picked out of the whole bunch. LEMON!!!!! And it was good. Oh it was good. No whipped cream though.

Update: Well I just finished mixing the crust. Its in the freezer stiffening so I have to wait awhile before I can make the filling. I''m afraid its so hot the butter practically melted before I could mix it with the flour. So we will see how it turns out. This is the first crust I have ever made without my mother

This is hilarious!!!!! Yep, I found it on the food network website and thought it looked good....can''t wait to hear how it turned out!! The image of you triple-straining through a cheese grater and tea ball is REALLY funny!!!

I also missed the whole Lemon Pie saga stuff but I have certainly enjoyed the aftermath!

Deco, I bought a bunch of kiwi at costco yesterday and thought of you;)
 
I will forever associate Deco with Kiwi anything. Hey Deco my husband loves Kiwi pie, hehe.

Well ladies I am finally enjoying my pie! I was going to post pics as I went but that just got annoying. So here is the crust as I was fitting it into the pie dish.....

Here is the pie before I stuck it in the oven. And that is the cup of froth I had to skim off the filling. I tried to make lemon curd with it but failed miserably! Oh well.

This has been edited once more. LOL. Sorry, my mom didn't like my directions so I had to change them!

Overall its a darn good pie! I cooked it for probably twice as long as the recipe says. Its still a little running in the very center so perhaps it needs a pinch of cornstarch or another egg. Something to firm it up just a bit. But otherwise it is delicious. Pretty potent so you better like your lemon! Some might add less lemon juice and that extra egg instead. I used a large pie pan but it was only enough for the one which I had a suspicion of. Oh and the crust Indie, no prob we got it out of a cook book but it is to die for and you will soon see why....

3 cups flour
2 sticks butter
8 tbsp. ice water(may vary)

Cut butter into flour with pastry cutter or two knives until pea size. Add ice water. Stir with fork until it is just moistened. Gather into a ball with cold hands. Flour lightly and wrap in waxed or parchment paper. Chill in fridge for 1 hr. or freezer 20 minutes. Roll out. This amount made my bottom crust with a little left over but not enough for a lattice.

The wonderful part I am enjoying now, I had just enough juice to make a fresh cup of lemonade on this hot May afternoon! Enjoy! Anyone in TC, MN want to come over, discuss diamonds and eat pie???

i always hate when recipes followed perfectly don''t give you the right results. bake twice as long? yikes!

so did you love it? other than it being super strong lemon? i may have to try my hand at it! i love lemon stuff!
