I think I mostly say (when telling someone else that I couldn't go to work) that I called OFF work. But before the action of calling, I typically say that I need to call IN. I've definitely heard it all ways though, call off, call in, call out. When I worked for Publix (grocery store for those of you without them) in the office I'd often tell the manger that someone called OUT.
