I used boneless skinless chicken breast. It cooks quickly enough it isn't dry. DH loves it and I can make it in under 30 minutes.

This is the result of a very bad idea.

I was diagnosed with Covid a couple of weeks ago. Two days later my son took my wife to the hospital since I could not go to the hospital with Covid. Ruth's Chris texted me on Friday and asked if they could bring me a hamburger and fries. I humbly replied yes. The manager showed up with a hamburger and an order of spicy shrimp.

I was more moved by this than even I would ever have guessed. I wrote a nice thank you letter and decided it was tie to finally make the Key Lime Pie I had promised to make when we had our last night dinner at Ruth's for the Gettogether we had here in Boise a few years ago. The manager let me know that no one would order the Key Lime Pie since they all said they had incredible Key Lime Pie at my house the previous two nights.

So, I masked up to make the pie. The doctors tell me I am cured and no longer contagious. I do not feel cured because I am still coughing and have a runny nose. Minor, but I do not want to make anyone sick.

When I got about half way done, I sneezed violently into my mask and naturally, I turned my head, but still...

This morning, I decided taking a pie to them made when I was possibly still sick with Covid was a real bad idea. I had a piece for lunch today and so you only get to see an almost complete pie.

OMG this thing is GOOD! If anyone wants the recipe, just ask and I will post it here. It is incredibly easy and quick.
 
Where do you get your Key Limes in Boise? I'm originally from south Florida and we had a Key Lime tree in our back yard, so my mom would make Key Lime pie all the time. But now I'm in New England and I never see them here, or I should say that maybe I've seen them once in the last 30 years. The pie looks yummy and reminds me of my childhood.
 
Doubt I have ever seen a key lime. However, the recipe I use calls for a cup of key lime juice, which I buy at Freddie’s.
 
I have moved to an altitude where baking is challenging. My cakes are dry :(2 I’ve taken to cutting them up, dousing in rum, making a rum chocolate ganache, and making ice cream.

Been really warm the last couple of days so I have been lazy about cooking for 2, so I just made a rotisserie chicken salad and mixed with broccoli salad for a quick all in one meal.

The Korean “feast” for 2 was Easter dinner a couple weeks ago. Even though it was just dinner for 2, I had to go all out because it was Easter!

When life got settled down and I was both non contagious and symptom free, I made a pie for the manager. I took it in for a Friday night happy hour dinner and presented the manage with the pie. He took it in the kitchen area and had a piece. He came out and agreed with me that it was indeed better than their pie.

He also told the kitchen and wait staff to share the pie and I got many comments from the staff about how good the bite they got was.
