My 10yo's lunch! Bone marrow and some duck dish.

The waitress was smitten with him because he ate everything and raved about how much he loved the bone marrow!

This is the kid who used to throw up all solids and ate nothing but 5 specific home made purees until he was 3!

I like my orxata (rice milk w/a sprinkle of ground cinnamon) dirty (espresso).

No food as such but a recipe, my own take on the Coronation Chicken that I like to make as a filling, either between two pieces of bread or as a topper on crisp breads/crackers etc...

Not authentic by any means, however, I like it and would happily eat it compared with other versions that I have tried in the past.

No measurements as I do it by feel and taste. It should be quite solid and not gloppy.

As the sultanas and crushed flaked almonds absorb some of the moisture from the mix as it is kept in the fridge, it will turn more solid and the sultanas will be nice and juicy.

Finely diced or shredded skinless cooked chicken (I prefer thighs, and would eat the cooked crispy roasted chicken skins myself)
Mayonnaise (Hellmann's full fat version)
Patak's curry paste (whatever I have to hand, usually Madras or Balti)
Lime juice and Sugar (or use Lime Cordial)
Freshly chopped coriander
Sultanas or chopped diced dried apricots
Easy garlic paste
Easy ginger paste
Crushed toasted flaked almonds
Dash of oil
Salt and pepper to taste

Just mix together and leave in the fridge overnight before serving.

I made French toast and my parents made strawberry rhubarb pie with whipped cream yum! It was a good weekend!

My signature dish has always been hickory smoked chicken wings in a honey soy marinade on the weber kettle. Lately I'd been watching a lot of BBQ channels on YouTube and decided it was time to branch out a bit and try smoking some different meats in the Weber.

First attempt was some pieces of Salmon and a nice size Brown Trout that I had caught recently. The Trout was very juicy, a bit too juicy for my wife's liking but my nephew absolutely LOVED the salmon - or as he calls it, Slammin' :lol:

Yesterday I did a rack of beef short ribs; seasoned overnight with salt, pepper and a maple rub and then smoked low and slow for 7 hours with Cherry wood. It wasn't quite as juicy as I hoped it would be but it was still very tender and the flavour was absolutely brilliant! Check out the smoked ring! Screenshot_20230529-192046_Gallery.jpg

I LOOOVE the food in Australia. In our holidays there, we never had 1 single bad meal. I wish I lived there, not least cuz of the food.
