Show us your food!

My first donation for Cake4Kids. It is incredibly stressful to bake something for others and not be able to taste test it (like broken prong level of stress :errrr:). She’s a late teen so did something a little more “grown up”.

From top to bottom, $5 Poke bowl from work cafeteria, fish and chips (minus chips, double purple slaw), my wino hour snack and my pre-4th of July BBQ with hot links, cauliflower tots and spinach and quinoa salad.
 
I get a lot is soup and salad combos at work, so here are some of my work meals. The flan was something I made for my hubby’s birthday in lieu of cake :)

We went on a quick weekend away and here is most of the stuff that we ate!

One restaurant had a very strict child policy which didn't faze us but they looked pretty wary when we showed up with the 10yo. They absolutely adored him by the end of the night because he ate everything served and complimented their food when they stopped by to chat to him :lol:

Ten year old boys are so easy to feed! They eat everything and they eat a lot!!!

I can’t wait to dig into this Mexican Street Corn Salad - one of my favorite summer dishes!

I mostly follow this recipe:

Tweaks: I let the diced onions marinade in lime juice for a few minutes before adding the other ingredients. (Unfortunately I had to use yellow instead of red onions today.)
I substitute ground cumin and chipotle pepper powder for about half of the chile powder. I also use an about twice as much cotija cheese as the recipe calls for.

I love (my homemade) tortilla bake! I rarely eat pasta/noodles, but buy/love our locally made (organic) corn tortillas. Melt in your mouth goodness--don't even know you are eating anything. Great choice!!!!!

I’m vacationing in Cabo this week, and the food has been amazing, the most amazing was when we went to a traditional seafood place, and ordered the seafood platter for 2! This was the result:

It easily fed 4….there crab, 4 lobster tails, grilled shrimp, sautéed octopus, and a butterflied red snapper that was not captured in this pic!
 
I forget what sort of beef roasts these are, but they were delicious. Locally raised grass fed and finished. Cooked over cherry and apple cooking wood.
