If you slow caramalize the garlic in a bit of olive oil, it does something to the garlic. Cooking it this way really reduces the impact it has on my stomach (I could only handle a little before starting to cook it this way) and it also prevents the garlic smell (that awful garlic odor that follows you everywhere for days after eating garlic) so you can enjoy the flavor and not offend the people you work with!
A light garlic meal for us is usually about 2 heads. Usually I use somewhere between 3-5 heads per dinner. Garlicy dinners get 6-8 heads
